VEGETARIAN CHILI

2 cans (15 oz) pinto beans, rinsed and drained
1 can (28 oz) crushed tomatioes
1 can (16 oz) kidney beans, rinsed and drained
1 can (15-1/2 oz) hominy, rinsed and drained
1 can (15 oz) garbanzo beans, rinsed and drained
1 can (oz) tomato paste
1 can (4 oz) chopped green chilies
2 small zucchini, halved and thinly sliced
1 medium onion, chopped
1-1/2 to 2 cups water
1 to 2 tbsp chili powder
1 tsp ground cumin
1 tsp salt, optional
1/2 tsp garlic powder
1/2 tsp sugar
1/2 cup shredded Monterey Jack cheese

Combine first 15 ingredients in pot cook on low.
Sprinkle with cheese
yields 12 servings (about 3 quarts).

Hard to find so I use the meat recipes and skip the meat adding a little oil then saute tofu right before serving to add.
