KRISPY's BURRITO:

1 1/2 lbs. Italian sausage, cooked
1 onion, chopped, cooked
1 small can chopped green chilies (optional)
1 package frozen create-a-meal vegetable mix (broccoli, snap peas, water chestnuts, red pepper strips)
1 package chili seasoning mix
3/4 cup water
1 (8 oz.) package shredded cheese (Mexican)
8-10 large flour tortillas
sour cream

In large skillet, cook sausage and onion thoroughly; drain off grease. Set aside in bowl.

In same skilled saute chilies and frozen vegetables until tender; re-add sausage mixture, chili seasoning and water. Mix until blended and heat until bubbly.

Place a small amount of cheese on the lower center portion of the tortilla (see directions on package how to wrap) followed by 1/2 cup sausage mixture. Fold bottom up, side inwards, rolling up to top. Place the seam downwards on cookie sheet. Same procedure with remaining tortillas.

Bake at 350 degrees for 30 minutes. Serve with sour cream.

You can fill the wraps with just about anything you want. Just remember you usually want to heat them first, maybe even toast them a little (not too much or they get crispy & won't wrap). To me, the best way to do this is toss them in a hot skillet (you don't need any oil, or use a very very little bit). It only takes about 10 seconds a side.

One thing you can do with them if they're plain or whole wheat (don't think you'd do this with a sun-dried tomato one!) is toast the wrap well with a thin layer of butter, then sprinkle on cinnamon sugar. That's great if you just have one or two left over after making a meal - instant dessert.

I make a yummy buffalo chicken wrap every so often-
Cook some chicken breast (I slice mine to look like tenders) in a pan with just a bit of Pam...coat with a lil tabasco or buffalo sauce...throw a piece of lettuce, some tomato, the chicken, and a little low fat ranch or bleu cheese and there ya go, quick and yummy!

And here's a greek style one-
Chicken, feta cheese, olives, and a lil ranch

breakfast-
Cook up some sausage crumbles, add eggs or egg beaters to the pan and scramble it all up. Then you can add diced peppers, onions and mushrooms and some cheese. Roll up nice and tight and you've got breakfast to-go!

Chicken, steamed broccoli, tomato, and a squeeze of lemon juice, salt and pepper is really tastey too.

You can basically put ANYthing in a wrap and it'll taste great! I love the spinach wraps!!

Chicken Fajitas.
Have ready 50g/2oz (about 0.5 breast) cooked chicken, cut into strips, and 1 teaspoon each of crushed ginger and crushed garlic. Finely slice 0.25 green pepper and 0.25 red pepper and 1 small onion, chop 2 tomatoes and 1 green chilli and cut a 5cm/2in lengths of cucumber into strips. Heat a nonstick pan and add 10 sprays of oil. Stir in the onion, peppers, ginger and garlic and stir-fry for a few minutes until softened. Add the chicken, tomatoes, chilli, 50ml/2fl oz passata and 50ml/2fl oz hot water. Heat through, add seasoning to taste. Warm 1 wrap and pile on the chicken mixture. Serve with a handful of shredded lettuce leaves. Quantities above are for 1 serving.

You can so put anything in a wrap! Use your imagination. We fill them with taco makings, sliced leftover steak with peppers and onions, once I tried chili but that was way too messy (don't know what I was thinking), sandwiches, sliced leftover chicken with lettuce and salad dressing. The possibilities are endless!

Our favorite is a very thin sliced lunch meat of your favorite flavor (or two or three flavors), your favorite sliced cheese(or cheeses), top with lettuce and your favorite salad dressing then roll tightly and eat. If you don't like dressing use a sandwich spread. Another is cream cheese mixed together with black olives, garlic powder, white pepper, and chives. wrap them tightly and roll them in plastic wrap and chill for 1 hr. take off the plastic wrap and slice in 1/4 inch slices for appetizer's.
