Bittersweet Chocolate Brownies:

6 tablespoons unsalted butter, plus more for the pan
2/3 cup all-purpose flour, plus more for the pan
8 ounces bittersweet or semisweet chocolate (at least 70 percent cacao), coarsely chopped
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
2 large eggs
2 teaspoons vanilla extract
1/2 cup sugar

Preheat oven to 350° F.

Coat an 8-inch-square baking pan with butter. Add a spoonful of flour, tilt to coat, and tap out any excess; set aside.

In a double boiler or a large heatproof bowl placed over a pan of simmering water, combine the chocolate and butter. Heat, stirring occasionally, until the chocolate melts. Remove from heat; let cool.

Meanwhile, combine the flour, baking powder, and salt in a medium bowl; set aside.

Whisk the eggs and vanilla extract in a large bowl until foamy. Add the sugar and whisk until light and frothy, about 1 minute. Slowly stir in the cooled chocolate mixture. Add the flour mixture in 2 batches, whisking until incorporated after each addition. Scrape the batter into the prepared pan. Bake until a skewer or toothpick inserted 1 inch from the edge of the pan comes out clean, 20 to 25 minutes (a bit of moist batter should cling to the skewer). Transfer the pan to a rack to cool for 10 minutes before slicing.

Yield: Makes 8 servings

This is my favorite recipe....because it uses chocolate they're much more fudgy than normal homemade brownies....also the frosting is rich and creamy...not gritty like some made with powdered sugar.

DOUBLE CHOCOLATE BROWNIES

Brownie Ingredients:
4 squares BAKER'S Unsweetened Baking Chocolate
3/4 cup (1-1/2 sticks) butter or margarine
2 cups sugar
3 eggs
1 tsp. vanilla
1 cup flour

Frosting Ingredients:
4 squares BAKER'S Unsweetened Chocolate
2 squares BAKER'S Semisweet Chocolate
1 can sweetened condensed milk
1 tablespoon butter
1 teaspoon vanilla

PREHEAT oven to 350°F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan. Grease foil.
MICROWAVE chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Stir in sugar. Blend in eggs and vanilla. Add flour ; mix well. Spread into prepared pan.
BAKE 30 to 35 min. or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool in pan on wire rack. Remove brownies from pan, using foil handles. Cut into 24 squares....leave in rectangle shape....prepare frosting...

Frosting Instructions:
In double boiler (if you don't have a double boiler a glass bowl sitting over a pot of boiling water also works) melt all chocolate together. Remove from heat and add the rest of the ingredients....mix well.

spread frosting over top of rectangle of brownies (don't let frosting sit too long or it will become unworkable)....let sit to set up. Store in tightly covered container at room temperature.
