Anybody know how to make the beef they serve there not the ribs but its skirt steak i think?

i don't know if this is what u are looking for but here is a recipe for skirt steak.
Grilled Skirt Steak
Juice of 6 limes
3 jalapeno chiles, seeded and minced
6 garlic cloves, minced
1/4 cup olive oil
3 pounds skirt steak, trimmed of excess fat and cut into 6 serving pieces
2 teaspoons coarse salt

Whisk together the lime juice, chiles, garlic and olive oil in a small bowl. Generously brush each piece of meat all over with the marinade and roll each piece up into a cylinder. Arrange the rolled steaks in a shallow nonreactive dish and pour on remaining marinade. Cover and marinate in the refrigerator 24 to 48 hours. About 30 minutes before cooking, remove the meat from the refrigerator. Unroll the steaks and sprinkle with salt.
Heat the grill to very hot. Cook the steaks just until seared on both sides, 3 to 4 minutes per side for medium rare. Transfer to a cutting board and slice across the grain into diagonal strips.

I grew up on the island of Kauai. Our luau's consisted primarily of lau-laus (pork & butter fish , taro) , Kahlua Pork(pig cooked upon lava rocks under ground), sashimi was popular , and the only skirt steak I can ever recall being available was teriyaki.
The hawaiin recipe is really an old Japanese recipe only a lil sweeter. Try Lowry's Teriyaki marinade it is the closest ready made sauce I have ever come across that is close to the home recipe.
Other than that I know that they fry the skirt steak with onion, soysauce, garlic.

I like the Spam Musubi, Chicken Katsu, Mahi Mahi, and Saimen. I didn't care for the pork laulau however but that's just my personal preference. Their portions are very generous. A small is what some places might consider a large serving.
