Everything! That's a great time of year to visit. Go see the tree in Rockefeller Center. Take a look at the store windows dressed for xmas -- my favorite is either Macy's or even Lord and Taylor, all in the same area. Take a carriage ride around Central Park. Go to the museums (Walk up 5th ave and you'll bump into most of the museums -- The Met, the Frick, Guggenheim, etc.) Have Fun!!!

There's some great answers here. I just want to add that you don't have to spend a lot to visit these places. Museums sometimes charge "suggested admission" which means you can sort of pay whatever amount you like, just ask them first. There's also many discounts to places and event if you have a Metrocard or coupons. Some places even have free admission days.
Do take pictures and remember those moments. :D

Try to get tickets to a taping of one of the tv shows. When I was 15--oops I mean 16, you have to be 16+--I went to NYC and got in to the dress rehearsal of Saturday Night Live, that was cool! And my sister (a different time) was on Donahue.
