Can you see the beams, then I would call it a cathedral ceiling.

If the beam are hidden/covered with drywall, then a vaulted ceiling.

I have cathedral ceilings, the beams are exposed, and the actual ceiling is only a few centimetres from the roof, seperated by the insulation.

VERY difficult to clean the spider webs from.....as they're so high....
