So, my new neighbors have the same baby moniter as us. If we are on the same channel, they interfere. They clearly do not know yet. I am nervous that if they know, that they will start eavesdropping. Should I tell them or let them figure it out on their own?

I doubt they know yet. They moved in yesterday, The reason we found out is because ours got static-y at 9pm last night. We switched frequencies and it was fine. So, this morning, a received was on in my basement set to the other frequensy. I freaked because I coudl hear a conversation in my basement. It was them through the moniter. They definitely don't know yet.

I think both parties should respect the others' privacy, and use different channels, or otherwise different monitors. I would advise you tell them to avoid any kind of possible conflict between you both.

This happened with our monitors when we first got them. There should be a way to switch the channel that you receive your signal on. Ours are the Fisher-Price Sounds and Lights monitor (link below). We can choose between two frequencies to listen on. If the fact the you can hear your neighbors and they can probably hear you and you don't have this feature, you might want to think about picking up a monitor that gives you this feature.
When we started using our monitors, we realized that we could hear a neighboring house a few doors down. We switched frequencies and left it at that. Still, we're careful not to fight or have sex with our monitors on... just in case.
If you know that you can hear them, they probably know that they can hear you. If you are friendly with them, let them know (though I'm pretty sure they already do know). Otherwise, I would let it go and let them figure it out on their own. I mean, if some stranger came up to my house and told me that he/she could listen in on my homelife, I think it might be a creepy feeling.
Personally, I would pick up a monitor that allows me to switch frequencies, or simply switch the frequency on the one I have and not worry about it.

If you don't and one day they ask you...are you going to tell the truth so that they know you may have been eavesdropping or are you going to be able to successfully play dumb? You may end up knowing these people very well, can you hide the secret forever, how would you feel if they found out accidently?

The right thing to do is tell them. HOWEVER, letting them find it out on their own would be ok too I guess, because you don't even know these people and you shouldn't talk to strangers. But I would watch what you say, cause if you can hear them, they will start to hear you!

I'll bet you they're pondering the same question and have so far reacted in the same way. So far, they have chosen not to tell you.
Since your new info., I'd say let them know immediately. If you don't let them know and they notice later they might wonder if you knew and didn't say anything since you were there first.

It isn't OK to eavesdrop and if they are close friends, tell them. I would go get a different monitor. That way you're certain they can't hear you.

I would change my baby monitors!!! Or keep it on a different frequency! You don't want to keep watching what you say in your own house!

Yes. You should assume they already can and have eavesdropped, either accidental or on purpose.
Also assume other you know know about have listened to that frequency.

Yes I would and take steps to stop it. It could be trouble for both families.Also you are invading their privacy if you don;t remove the source and tell them.
