I might well be wrong, but I aways thought that the microwave worked by er.. energizing the water particles (or fat or sugar particles) within the food which in turn heats the food you are cooking.

That is sort of a myth. Microwaves cook by using microwave radio energy which excites the water molecules in the food. This excitation of these molecules rubbing together creates the heat which then cooks the food. The moister parts of the food will heat first and the dryer parts will possibly burn on you which is why your micro should have a revolving turntable to constantly rotate the food while cooking.

iswd's right....In addition, I've used microwaves enough to know that they do, in fact, heat food up from the OUTSIDE IN. That'd help explain cold centers, frozen spots, etc. that would otherwise not make sense if the opposite were true (microwaves cooking food from the inside out)

....As a matter of fact...now that I think about it....WTH kind of question IS this?? WHAT cooking method IS known to cook food from the INSIDE OUT??? Broiling, baking, grilling, boiling, frying any other kind of method I can think of cooks food from the outside in!! Man....what an idiot I feel like for falling for such a question!!! It does not. Your already found out that it does not. Frequently recipes in microwave cookbooks will tell you to arrange items in a donut shape around the empty center. Mushrooms stuffed with cheese and crab meat cook best when you put them around the outer edge of a plate.

microwaves work by vibrating the water molecules in the food. the waves have to penetrate the item in order to cook it. that is why denser foods need a longer cooking time.
