The yellow part is the most nutritious part esp. non-veg eggs
The white part is also good, use it
For cooking just put eggs in fresh hotwater for 30 seconds then take-out and use - so there will be no loss of proteins.
If you feel it brake/damage then put egg in cold water and start boiling for few minutes but don't keep full boiled - half boiled in order to not destroy is proteins.
Full/complete cooked ways of different kind is also good and give tastes - there is no much loss of proteins in anyway.

Eggs are an excellent "nutrition dense food". A large egg has 6 grams of protein, some vitamin B-12, Vitamin E, calcium, folic acid, zinc, iron, riboflavin, essential fatty acids and only 75 calories. Although a large egg has approximately 210 mg of cholesterol, it has only 2 grams of saturated fat. Eggs are actually a "low saturated fat" food.
Egg whites are mostly pure high quality protein. The cholesterol and fatty acids are contained in the egg yolk. The American Heart Association is not particularly concerned about the cholesterol in eggs, if you do not have high cholesterol levels, eat an otherwise healthy diet, exercise regularly and do not have other mitigating risk factors. People with normal cholesterol and no other risk factors may consume an egg every other day without any problem, if they are not sensitive to dietary cholesterol.
Free range hens that are allowed to forage on plant food in the barnyard actually produce healthier eggs as compared to commercially-fed caged hens in a chicken factory. Research is being done to try to produce "designer eggs"which will have increased amounts of omega 3 fatty acids which are good for you. This is done by feeding chickens food rich in flax seed oil and fish oil.
Some safety tips for egg consumers:
01. Check eggs before buying. If they are in a carton, turn them over. If they are stuck to the bottom, they may be cracked.
02. DO NOT WASH EGGS before storing them. This may remove the invisible protective coating surrounding the shell, allowing bacteria to enter.
03. Store eggs in the fridge in their original carton.
04. Wash hands and utensils thoroughly after handling raw eggs.
05. Cook eggs thoroughly. To kill bacteria, fry an egg 3 minutes per side, 5 minutes total for a poached egg and 7 minutes for a boiled egg. If you do eat the yolk, cook until both yolk and egg white are firm. Scrambled eggs should not be runny. Usually it is not a good idea to have sunny side up eggs with runny yolks.
06.If you are using raw eggs in a recipe like cookie dough, DO NOT LET YOUR CHILD LICK THE BOWL.
07. Keep eggs and egg containing foods refrigerated. Do not let them sit at room temperature for more than an hour.
My personal recipe for an omellette:
1. Chop one medium onion, fine.
2. 1 green chilly, finely chopped.
3. 1/2 of a medium tomato, finely chopped.
4. 6-8 sprigs of coriander, finely chopped.
5. 1 clove of garlic, finely chopped
Fry the onions in 1 1/2 tablespoonfuls of olive oil till light brown. Add geen chillies, garlic and tomatoes and cook for a minute. Add 3 eggs, finely whipped. May add 1/2 teaspoon of baking soda to make it fluffier. (May or may not use egg yolk according to your cholesterol preference. I use only 1 egg yolk and discard the other 2). Cook till light brown, flip and cook the other side the same way. Sprinkle finely chopped coriander. I mix a little salt to taste. Black pepper, finely ground, may be sprinkled lightly to add flavor, but it needs to be fresh.

egg white is protein albumin which is the most nutritiuos and egg yolk has lots pf cholesterol so it dpends if ur middle aged then u dont take too much of tht yellow yolk. pouched eggs are the best. or half boiled r good too.

yo can buy egg whites seperately at any grocery store that way you can cook them without getting rid of any nutrients

proteins denature and this is cause by heat, acid, and enzymes. they are weakened not destroyed. the "experts" still cant agree on whether the egg is healthy or not.

i like tortilla espanol -- it like potatos and onions and eggs -- YUM! why would cooking destroy the protein? don't worry so much and just enjoy your eggs!
