I use canola oil and olive oil. It's supposed to be healthier.

Oil transfers heat over the surface of whatever you're cooking better than just slamming it into a hot pan. It browns and cooks better when it's in oil.
Olive oil is better, lower in cholesterol and healthier for you.

Groundnut oil is good if you do not want to change the taste of the food. Olive oil is excellent in Italian dishes where it's fantastic flavour is part of the authenticity of all Italian dishes.

some oils are for flavor but all are for the food not to stick when cooking.....vegetable oils are normally just for the nonstick factor....olive oil,sesame?oil, add flavor as well

extra virgin olive oil is good for you. i think there are some kinds available that have a lighter flavor so they won't change the taste of the food too much.
