Acapulco baked eggs

Ingredients:
Eggs (large) 8 Butter or margarine
2 tbsp Milk 6 tbsp Salt
3/4 tsp Pepper
1/4 tsp Extra-sharp cheddar
2/3 cup Canned green chillies
4 oz Tomato sauce, ketchup chili or taco sauce (optional) Tomatoes
The Steps
Pre - Preparation :
Shred the cheddar.
Chop the green chillies.
Slice the tomatoes.
Preparation :
1-Melt butter in a pan
2-Slightly beat eggs, milk, salt and pepper. Pour into pan.
3-Bake at 350 for 10 minutes or until eggs begin to set. Sprinkle with cheese and chillies.
4-Draw a wide metal spatula across bottom of pan several times to break up mixture. Bake, breaking up mixture again several times, for 5 more minutes or until of desired doneness.
5-Serve with tomato sauce, ketchup or chilly sauce, if used. Garnish with sliced tomatoes.

Mushroom Pudding

Ingredients:
8 oz Self-raising flour
Pinch of salt
3 oz Suet
1 Small onion,sliced
1 lb Mushrooms, wiped,
Trimmed and sliced
4 Rashers streaky bacon,
Chopped
Salt and black pepper
A little water or stock
Method:
1-Mix the flour, salt and suet together then add sufficient cold water to form a soft dough. Turn out onto a lightly floured surface n roll out.
2-Use 2/3 of the dough to line a greased 2 pint pudding basin, reserving the remaining 1/3 for the lid. Seal any gaps well.
3-Mix the onion, mushrooms and bacon together, season, and put into the centre of the pudding, adding a little stock or water.
4-Add the dough lid, pressing the edges firmly together and sealing with a little water. Tie a circle of greaseproof paper over the basin n cover securely with kitchen foil.
5-Bake an hour and a half in a 325F oven OR Place on a stand in a saucepan, and pour round sufficient boiling water to come about half way up the basin.
6-Cover and boil for 2 to 2 1/2 hour's, topping up with boiling water as necessary. Serve with potatoes and a green vegetable.

Bisciut with Jam

Ingredients:
1 cup maida
1/2 cup butter
1/2 cup powdered sugar
1 egg, beaten
1/2 tsp vanilla essence
1/2 cup walnut crumbs
1/4 cup jam
Method:
1-Mix maida and butter
2-Then mix sugar, essence and egg to form a dough
3-Keep the dough for 15 mins.
4-Make small balls of the dough
5-Roll the balls in walnut crumbs
6-Put the ball in the greased baking dish
7-Press the ball by thumb
8-Put jam in the hole of ball
9-Bake at 180 o C for 12 mins
Serve it.

Boston Cream Pie
2 eggs, separated
1/2 cup sugar
2 1/4 cups sifted cake flour
1 cup sugar
3 tsp baking powder
1 tsp. salt
1/3 cup salad oil
1 cup milk
1 1/2 tsp. vanilla
Beat egg whites until soft peaks form. Gradually add 1/2 cup sugar,
beating until very stiff peaks form. Sift together remaining dry
ingredients into another bowl. Add oil, 1/2 cup of milk, and
vanilla. Beat 1 minute at medium. Add remaining milk and egg
yolks. Beat 1 minute and scrape bowl. Gently fold egg white
mixture in. Bake in greased and lightly floured 9-inch cake pans
in moderate oven (350F) for about 20 minutes or till done. Cool
10 minutes and remove from pans. Cool completely. Fill with cream
filling and frost with chocolate glaze.
Cream Filling
1/3 cup sugar
3 Tbsp. flour
1/4 tsp. salt
1 1/4 cups milk
1 beaten egg
1 Tbsp. butter
1 tsp. vanilla
In saucepan, combine sugar, flour, and salt. Gradually add milk
and mix well. Cook over medium heat til misture thickens and boils,
stirring constantly. Cook and stir 2 more minutes. Very gradually
add the hot mixture into the egg and then return to saucepan. Cook
and stir until mixture just boils again. Stir in butter and vanilla.
Cover with waxed paper and cool.
Chocolate Glaze
1 1/2 1-ounce squares unsweetened chocolate
2 Tbsp. butter
1 1/2 cups sifted powdered sugar
1 tsp. vanilla
3 Tbsp. boiling water
2-3 tsp. water
Melt chocolate and butter over low heat, stirring constantly.
Remove from heat. Stir in powdered sugar and vanilla until crumbly.
Blend in 3 Tbsp. boiling water. Add additional water 1 tsp. at a
time to form medium glaze of pouring consistancy. Pour quickly
over top of cake and spread evenly over top and sides.

simple peach crisp
1 stick of butter
a cup or sugar
1 cup of flour
peaches
layer pie pan with sliced peaches,cut the other ingredients with two butter knives until they look crumbled...put on top of peaches.... and bake in a 350 oven for 30 min.
