Rice vinegar is a good substitute for sake.
If that is also not available a close alcoholic substitute is dry white wine and a non alcoholic one thoug a poor substitute is cider vinegar.
I would go with the white wine personally.

Sake is rice wine (sake = wine in Japanese) as for cooking, Chinese rice wine or dry sherry, even dry white wine can be very good replacements. I do not like to drink Chinese rice wine, but I like warm sake to serve with sushi or sashimi. In my mind, sake is better quality rice wine.

Considering the alcohol content in sake and it is made with rice, I would use vodka and it should have the same effect. If you use wine, I am afraid you will lose the flavor you are trying to achieve. Vodka is made with potatoes and would be my choice.

Mirin. You can find it at your local Asian grocery or store. Use white wine as substitute.

dunno. but flavored sake is GREAT!!!!!!! o-yeah, sometimes you can ask them to special order it for you.
