Texas Chili Recipe

INGREDIENTS:

* 3 pounds lean beef, coarsely ground or cut in small cubes
* 1/4 cup chopped onion
* 3 tablespoons vegetable oil
* 6 cups water
* 2 bay leaves
* 1/4 cup chili powder
* 1 tablespoon salt
* 8 to 10 cloves garlic, minced
* 1/2 teaspoon ground cumin
* 1 teaspoon oregano leaves, crushed
* 1/2 teaspoon ground cayenne pepper
* 1/4 teaspoon black pepper
* 1 tablespoon sugar
* 3 tablespoons sweet Hungarian paprika
* 3 tablespoons flour
* 6 tablespoons cornmeal
* cold water

PREPARATION:
In a 6-quart saucepan, sear beef with onion in vegetable oil until beef is no longer pink. Add water, bay leaves, chili powder, salt, garlic, cumin, oregano, cayenne pepper, black pepper, sugar, and paprika.

Simmer, covered, 2 hours. Cool. Refrigerate overnight so flavors will mellow. Skim off the solidified fat. Reheat. Combine flour and cornmeal; add a little cold water to make a smooth paste-like mixture. Add paste mixture to chili. Cook, stirring, for about 6 to 8 minutes longer. Remove bay leaves before serving.
Serves 6.

1 ea Onion, large chopped
1 ea Green pepper, med., chopped
1 ea Zucchini, thinly sliced
1 c Corn kernals
14 oz Tomatoes, canned plum w/juic
3 ts Tamari
2 ts Chili powder
1 t Cumin
1/2 ts Coriander
1/2 ts Oregano
1/4 ts Thyme
1 x Cayenne dash
2 1/2 c Kidney beans (1 c. raw)
1 x Green Chilis, as relish
1 x Cheese wedges, as side
1 x Onions chopped, as topping

Use cooked beans, or cook one cup of dry kidneys (or
pintos) beans in 3 cups
of water in a pressure cooker. Add a bay leaf or two,
some chili powder, cumin, a chopped onion, and perhaps
a green pepper to the water. Clean the dry beans and
cook about 30-40 minutes in a pressure cooker. Heat
the oil in very large skillet. When it is hot, add
the onion and saute
over moderately low heat until the onion is
translucent. Add the green pepper and saute until it
softens somewhat. Add the remaining ingredients,
including the beans, and simmer over very low heat for
15 minutes stirring occasionally. Serve on its own in
bowls garnished with a chili and cheese, or even
better over brown rice.

It's really easy. Buy a jar of Mexene Chili Powder (it's found in the spice aisle) and follow the instructions. The chili powder has all the spices like paprika already mixed in. It's easier than opening 10 different spice jars. Add as many or little canned tomatoes and beans as you want. I always add a little bourbon to my chili.

Basically you'll brown the ground beef or turkey, then add the onions and cook until onions are tender. Add the spices, tomatoes, beans, and liquids. Simmer for 30 minutes.

This is a great chili to make when you have guests coming. The compliments won't stop.
1981 WORLD CHAMPIONSHIP BUTTERFIELD STAGELINE CHILI

4 medium onions, minced
10 lbs lean beef brisket, finely chopped
1/4 c oil
1 1/2 cloves garlic, minced
2 lbs ground pork
1 can (7oz) whole green chiles, minced
1 can (15oz) tomato sauce
1 lb whole tomatoes, finely chopped
1 T cumin
1 t salt
1 t oregano
1 T dry mustard
1 oz tequila
1 can beer
2 jar (3oz) chili powder
2 beef bouillon cubes

Brown onions, and beef in oil. Stir in garlic, pork, chiles, cumin,
oregano, salt, dry mustard, tomato sauce, tomatoes, tequila, beer,chili powder and bouillon cubes.
Bring to boil, then reduce heat and simmer 2-3 hours. Stir
occasionally. Do not stir the last 30 min before serving.

The simplest and easiest way to make chili is to use these ingredients. Start with browning your ground beef. To that add the following
chili powder (you can use a lot of this)
garlic
fresh diced onion (powdered onion, minced etc..)
tomato sauce
a 1/2 cup water
salt & pepper
1 tbsp corn starch (mixed in a cup with a teaspoon of water) add it to the mixture it will thicken.
Add more water as you desire
some kind of bean (kidney,chili,pinto) optional


You can get more elaborate if you want by adding peppers, sausage,corn, parsley,cilantro, jalepenos etc...YOu are only limited by your tastes.

Do you mean chili sauce.?
Freshly make chili sauce:250gm .ripe (red) fresh chili then blend until very fine(2) 10 Pieces small lime n squeeze juice(3)salt to taste
(4) optional 10 piece fresh garlic to be blended together
