Try using a glass baking pan. Take an old towel or cloth and cut a strip to make a band around the outside of the pan. Wet the cloth, wrap it around the pan, and safety pin it in place. Bake the brownies at 350 for the prescribed time and they should turn out more moist.

O.K. here's the thing. When you bake something that has sugar (even sugar proteins). The sugars caramelize, or melt. the longer you melt these sugars, or the higher you allow their temperature to get, the harder they will be when they cool from that temperature.Anyone who's ever made homemade candy can collaborate this. So, the edges of your pans are too hot, causing the sugars to over bake, and become hard and even sometimes burnt. The best thing to remember with baking is even though you've removed your item(brownie, bread, whatever) from the oven , it will continue to bake, for at least a few mins. so go ahead and pull out your brownies a little earlier, or lower your oven temp by 25-35degrees, that way you can keep from getting those sugars too hot. Another thought is try a water bath for them. Take a cookie tray, and put a little water in it, then put your cake pan in the water, and bake. the water just might offset the temperature enough to keep your brownies from burning. Because the brownie batter is a little thicker than like cake batter. Cakes and brownie cook by convection meaning that they cook from the outside in and since it's thicker, it dries out the edge.

I would like to come back and see the answer. I make hockey pucks for brownies...I suck. AND I used to work in a camp kitchen. I always had the 2nd cook bake the brownies, in case they came out like crap...like mine always did.
Get a thermometer for your oven to make sure your oven isnt too hot and try a glass dish instead. Good luck...

I know this will sound crazy but just try it- my mom makes them this way and they are the best! Add a tablespoon of mayonaisse, it will make them very moist. Use a pirex glass baking pan, and if you live in a higher elevation turn it down to 300 degrees. Good luck!

There being cooked to fast in my opinion!!! Also a good tip instead of oil use applesauce it makes it softer and less fat! Try a lower temp. for longer time or use a glass pan it heats more even so one area isnt cooking fast than another, Goodluck!!!

It could have something to do with the altitude of your oven or what rack you are placing the brownies on. Or it could also be what you're baking them in,try out a pyrex dish and see what happens.

Have your ovens thermometer checked for accuracy it may be over heating. Or get an oven thermometer to make sure that 350 is really 350. I hope that I have helped.
