traditionally some beef was prepared for storage by smoking, much the same way as ham. They used fires of hickory wood to give the flavor to the beef. Now just about the same flavor can be given to meat by poring stuff on the meat as a marinade.

If you've never seen a hickory tree, try to imagine the tree that produces the wood that's so strong and yet flexible that it's used for Louisville slugger baseball bats.
A cousin of the hickory is pecan. If you have eaten pecans or pecan pie, then you have an inkling to the flavour of hickory. Only hickory nuts are much much harder to crack.
This is probably more than you wanted to know, but in case you never actually see a hickory tree, you know this now.

Indirect heat cooking (smoking) refers to food that is cooked at lower temperatures using a heat source that is offset and not directly under the food.
This cooking method works by drawing air into the firebox, then through the cooking chamber where the hot air and smoke slow cook the food.
The lower temperatures also allow the smoke to penetrate into food for added flavor.
So they use your favorite smoke flavor, by using chunks, sticks or chips of flavor producing wood such as hickory, pecan, apple, cherry, or mesquite.

smoke-flavoring -has been added to the beef,during packaging (raw-meat )
smoked-beef is ready to eat and can be reheated-
you can make your own in a pot on the grill (kettle type with lid) by sweating untreated hickory !
takes a couple hrs to make !!

it's the flavor of smoke...you can buy it in the store... liquid smoke... don't get it on your hands though... you will smell like you have been camping for a week
