Sesame Chicken with Spicy Dipping Sauce
1 small minced onion
3 cloves minced garlic
1 (1/4-inch) piece peeled fresh ginger
6 ounces lemon juice
6 ounces olive oil
3 ounces soy sauce
1 tablespoon crushed red pepper
2 tablespoons sugar
2 tablespoon salt
5 chicken breasts
1 cup toasted sesame seeds
2 cups all-purpose flour
Sesame Noodles, recipe follows
Soy Ginger Vinaigrette, recipe follows
Mesclun Greens
Spicy Apricot Sauce, recipe follows
In a food processor, combine the onion, garlic, and ginger and pulse to mince. Place in a bowl and combine with the lemon juice, olive oil, soy sauce,crushed red pepper, sugar, and salt. Shake, or stir well, before use. Cut the chicken breast into 2-inch strips. Put in plastic bag or tub with marinade. Marinate in the refrigerator overnight.
Preheat the oven to 400 degrees F.
Combine sesame seeds with the flour. Dredge marinated chicken strips in the flour-sesame mixture. In a skillet, heat enough canola oil to lightly coat the bottom of the skillet until hot, but not smoking. Cook chicken strips, on both sides until golden brown. Transfer to a shallow roasting pan and finish in the oven.
To assemble:
Toss the Sesame Noodles with some Soy-Ginger Vinaigrette and some fresh mesclun greens. Place the noodle salad on a plate and top with the cooked sesame chicken. Drizzle some apricot sauce over the chicken. Garnish with pickled ginger and a side of the apricot dipping sauce.

Sesame Noodles:
1 pound fresh angel hair pasta
1/2 bunch cilantro, leaves chopped
1 bunch chopped scallions
2 tablespoons olive oil
2 tablespoons toasted sesame oil
Cook angel hair pasta in boiling, salted water for 2 minutes or until al dente. Drain and rinse with cold water to stop the cooking. Add the cilantro, scallions, olive, and sesame oils. Combine well.
Soy-Ginger Vinaigrette:
1/4 cup soy sauce
1/4 cup lemon juice
1 tablespoon minced ginger
1/2 cup olive oil
1/2 cup canola oil
1-ounce boiling water
Combine all ingredients, except for the water, in a blender. Blend for 30 seconds. Then add the water and blend for another 10 seconds.
Spicy Apricot Sauce:
2 cups apricot glaze
1 cup balsamic vinaigrette
2 tablespoons soy sauce
1 tablespoon red pepper flakes
1 tablespoon grated ginger
1/2 cup mirin
Put all ingredients in a saucepan, and heat until the glaze melts. Whisk until smooth, and serve at room temperature. Add water if it gets too thick.

Sesame Marinated Grilled Chicken
Makes 4 servings
Ingredients:
1 tablespoon Mirin, sweet rice cooking wine
1/2 cup white wine
1/4 cup olive oil
1/4 cup sesame oil
1/2 cup soy sauce
1 tablespoon dry mustard
1 teaspoon cracked peppercorns
1 tablespoon fresh garlic, chopped
2 scallions, chopped
3 tablespoons sesame seeds, toasted
2 tablespoons ginger, freshly grated
1 chicken, about 3-4 lbs. cut into 8 pieces
Preparation:
Briskly whisk the marinade ingredients together in a small bowl until well incorporated. In a large zip lock style bag, place both the chicken and enough of the marinade to cover. You'll have leftover marinade, store it in a glass jar under refrigeration. Marinate the chicken for 3 hours or longer in the refrigerator.
Grill the chicken over a medium-hot fire for 45-55 minutes until the juices run clear when pierced with a knife. Turn the chicken often during the cooking time to avoid burning. Baste often while grilling, with the marinade, to ensure a moist and flavorful product.
This dish would be nicely complemented with basmati rice and a nice dry Chardonnay.
Wasabi and Sesame Grilled Chicken
Just a mouthful of flavors. Lemon, soy sauce, sesame and Wasabi combine to overwhelm your tastebuds and clear your sinuses.
Makes 4 servings
Ingredients:
4 boneless chicken breasts
Sesame Marinade (recipe follows)
3/4 cup Wasabi Sesame Dipping Sauce (recipe follows)
Preparation:
Prepare the marinade according to the recipe. Marinate the chicken for 45-60 minutes at room temperature. Once the chicken is in the marinade, begin the Wasabi sesame sauce. Grill the chicken for 4-5 minutes on each side, on your grill until browned and the meat is firm. Serve chicken on 4 warm plates with some steamed or fried white rice. Drizzle a little of the sauce over the chicken and serve some on small plates or in a small dipping bowl on the side of each.

Wasabi Sesame Dipping Sauce
Makes 4 servings
Ingredients:
2 tablespoons Wasabi powder or Japanese horseradish powder
1/2 cup soy sauce
1 teaspoon sesame oil
1/2 lemon, juiced
1 tablespoon toasted sesame seeds
Preparation:
Mix the Wasabi powder with enough cold water to make a stiff paste. Let it mature for 30 minutes to develop its heat. Whisk in the soy sauce, oil, and lemon juice. Add the sesame seeds just before serving. Serve the sauce on flat plates so your guests can roll their food in it, Japanese style.
Note: You can adjust the heat of this sauce simply by adding or subtracting the Wasabi paste.

A very simple way.
Take chicken, cut into bite size pieces. Season with salt and garlic powder, cook in pan untill no longer pink, drain add terriyaki baste and glaze, enough to make saucy. Saute about 5 minutes. sprinkle with toasted sesame seeds and serve over rice. ( I also add onions and peppers, just saute and add to chicken.)
