I have about 2 cups of egg yolks left over and am looking for ways to use them.

Make a custard, or LOTS of mayonnaise.

Delicious Lemon Curd, lovely on toast or in tartlets

1 cup white sugar

3 egg yolk
1 cup fresh lemon juice

3 lemons, zested
1/2 cup unsalted butter, melted
Add all ingredients to list

In a microwave-safe bowl, whisk together the sugar and eggs until smooth. Stir in lemon juice, lemon zest and butter. Cook in the microwave for one minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a metal spoon. Remove from the microwave, and pour into small sterile jars. Store for up to three weeks in the refrigerator.

Custards use egg yolks, so do egg noodles, and coconut cream pie filling.

raw yolks? if so make a pound cake or cook them in the microwave and add to potato salad or macaroni salad.
My Dad used to put a egg in homemade milk shakes--it makes them richer tasting.

You could make boiled egg custard for a pie, filling for a cake
or cream puffs, baked egg custard, egg nog, scramble them with potatoes and onions, make ice cream, puddings,,,etc
homemade banana pudding sounds real good right now!

If they are hard boiled already, make deviled eggs or egg salad. If they are raw, make an omelet or scrambled eggs.

Made from scratch, butterscotch pudding. If you want it made as a pie, use the yolks for the butterscotch and the whites for the meringue.

crush some saltines up add a little garlic powder. would make a good coating for baked fish.
