Depends on where you go. Every major city in China has "flea markets" selling old and new goods. I'd suggest you go to one as there are so many different items to choose from. I went to one in Beijing and the selection was terrific. Also beware of fake antiques. Just be realistic with what you see.
As for tourist souvenirs, there are standard "Mao" items like watches and red books. I tend to enjoy art items like painting, paper cuttings and crafts, which are easily found in tourist areas.

One of my best souvenirs I got in Shanghai, in the little street shop on Nanjing Road. It's a glass etching with the skyline of Shanghai (Oriental Pearl TV Tower, Jin Mao Tower, etc). It came with a battery operated light stand. It cost only about 10 RMB. A very good deal. I bought one for my self and my friends and they really liked it. Another thing that's really unique is in the Yu Yuan gardens in Shanghai. There is this artist who paints on goose eggs and they are awesome. I have two of them, one is a tiger on a mountain and a gold dragon. The paintings are really good and realistic. Plus the eggs come on a stand. I had to bargain with him and got them for 50 RMB each.

Depends who you are buying it for. Silk is popular in both countries but I can tell you it is very expensive in Japan. The cheapest silk Kimono can cost you US$800-900.
In China, you can buy silk or artwork. Very popular are paintings of a scene in 4 seasons (Spring-Summar-Fall-Winter). If you buy in touristics area, be prepared to pay RMB1000+ but if you buy from smaller cities you can get them for as low as RMB200. Beware of fakes, these can be photo copied artwork.

Asian people have the best candies - there are so many different kinds of candies that you will never, ever find in the U.S. I actually go out of my way to find asian supermarkets just to buy these snacks. Some of them even come in very colorful, interesting packaging. They are so yummy. Your friends will love them!
