Most of this is canned. Brown the ground beef and onion and they will store very well in the freezer until needed...you may have to adjust your cooking time to accomodate any thawing.
Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Mild Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours.

This is an easy recipe that you can prep in 5 minutes, so you won't have to worry about freezing:
1 bag (28oz) frozen diced potatoes w/ onions & peppers, thawed
2 cups shredded Cheddar & Monterey Jack cheese
1 can (10 3/4oz) condensed cream of celery soup
1 container (8oz) sour cream
3 pound fully cooked smoked bonless ham
1. Spray 5-6 quart slow cooker with cooking spray. mix potatoes, cheese, soup, and sour cream in slow cooker. Cut ham lenghtwise in half; place ham on potato mixture.
2. Cover and cook on low heat setting 5 to 6 hours. Stir well before serving. 8 servings

ROUND STEAK ITALIANO
1 1/2 lbs. round steak
1 tsp.salt
1/2 tsp. oregano
1/4 tsp. pepper
1 (15 1/2-oz) jar spaghetti sauce with mushrooms
1 (16-oz) can whole small onions, drained
Cut steak into 5 or 6 serving-size pieces. Coat with salt, oregano, and pepper. In slow cooking pot, pour spaghetti sauce over meat. cover and cook on low for 7 to 9 hours or until meat is tender. Turn control to high; add onions. cook on high for 10 to 15 minutes. Serve with Italian greeen beans and toasted garlic cheese bread. makes 5 to 6 servings.
