Not long ago a forgotten bomb shelter was found during renovations of the Brooklyn Bridge in New York City. This bomb shelter had been built right into the bridge and contained all manner of provisions for extrended stay in the shelter. From best estimates the bomb shelter was over 50 years old, and in it were found some old packages of saltine crackers. They were still edible even after over 50 years, although they did taste a little like cardboard.
Once I found some old turkish confectionery candy at home that had been sitting on the shelf for 15 years. I ate it all and it was fine.
Your cookies will probably be good for the next 20-30 years at least. These things are full of preservatives and should last forever.

The date that you see on products is not an expiration date but a sell by date. The reason for this is that the manufacturer knows that the product is at its best for only so long. The dates are more for the benefit of the vendor so that he will know when to remove an item to avoid selling a stale product and hurting the products reputation and his sales.
The cookies will remain edible for an indefinite period of time. Its up to you as to how long you want to continue eating stale cookies.

if they are unopened, you can still eat them after 10 days or so. But if they are opened, I would not go longer than 3 days, as long as you keep them sealed tightly. It is fine to eat them on the expiration date. and what usually makes the company put an expiration date is because they tend to get soggy and eventually stale

Is it a SELL BY THIS date? Eat them
Expiration dates are usually just a BEST IF USED BY date for most things isn't it???
Milk, Ice Cream, Butter, Eggs, Flour, etc., those can lose quality & taste. Spices can lose potentcy & quality. As for cookies, if the are unopened or sealed in a container or bag, they can last a LONG time!!!

if you go to a day old bakery that has cheap items, you can get cakes, cookies, and breads, the pies, and cupcakes that are all out of date. All that means is that they can not sell it on the grocery store shelves by that date, it DOES not mean that it will go bad ON that exact day. They are still good for a week or so afterward...

Expired cookies can be crushed and baked into pie crust. Use it to make cheesecake or any sweet pie.

If your cookies, have expired date on them, throw them out. You could get sick.
