You could add water, but I would recommend adding chicken stock for better flavor. I would put the liquid about halfway up the chicken. And yes you can add potatoes. If you want to try something different you could try this recipe.

Whole Chicken in a Crock Pot (using beer)

1 whole frying chicken
1 can beer
chicken broth to cover.
sliced onion to taste
chopped celery to taste
1 teaspoon basil
1 teaspoon rosemary

This recipe calls for a whole frying chicken, rinsed well in cool water, patted dry with the giblets removed. Place in your crock pot and add one can of beer and chicken broth to cover. Also put in some sliced onion and chopped celery (individual preference here). I also put some onion and celery directly into the cavity. Add to the broth one teaspoon of basil and one teaspoon of rosemary. Set on low setting, cover and allow to simmer for 6 to eight hours.

At the end of the cooking time the meat is very tender, almost falling off the bone, and I serve with rice and a salad. Good dinner on those nights when you have more activities then time to cook.

The broth can be put through a strainer and reused as a base for other recipes.

I hope this helps you : )

First of all.....if you want help you should not be so snotty...I really don't care what you want or what you don't want; but I can tell you this...if you do want help for this pathetic choice of a recipe: here goes.....You forgot to mention how long you would be gone at school so...it's a little difficult to time the cooking since you did not provide this info. If you are slowcooking anything you should do it overnight.....so it will be ready for you when you return. put the chicken in the crockpot (make sure you clean it first) with salt in water (Cold water wash) at least 3-4 times and clean your work area to prevent Salmonella. Season the bird with salt and pepper, add to crockpot, put one large quartered onion, approx. 1 1/2 cps of water on high. Bring to boil. Lower to simmer for at least 6-8 hours (or overnight). Meanwhile, (Yeah, Yeah, Yeah we know....you won't be around) you;ll be in school.blah blah blah! oh well, you have to add the potatoes, or other veggies such as Carrots the last 2-3 hours. So I guess you will have to return home at some point to do this because if you add with the chicken the potatoes and/or other veggies will literally turn to mush, most people check on the evaporation level at some point. If you won't be home....do overnight.

Here are a couple of additional recipes you might like to try sometime.....

Crock-Pot Chicken

6 to 8 chicken breasts, boned (or 1 whole chicken, cut up)
1 pkg. Good Seasons Italian dressing mix

Brush chicken with melted butter; place in the crock-pot. Sprinkle
dry dressing mix over chicken. Cook for 5 hours on low.

Note: You can cook the chicken then remove the bones and put the chicken back into the crock-pot and add the following sauce.

Sauce:

1 (8 oz.) cream cheese
1 can cream of mushroom soup
2 Tbsp. Chopped onions

Melt all ingredients over low heat and pour over chicken in the crock-pot. Cook an additional 30 to 45 minutes before serving. Serve over rice or with potatoes.

Greek Chicken

4 potatoes, quartered
1.5 pounds chicken pieces
1 large onion, quartered
1 whole bulb garlic, minced
2 tsp. dried oregano
1 tsp. salt
1/2 tsp. pepper
1 Tbsp. olive oil

Place potatoes in bottom of slow cooker. Add chicken, onions, and
garlic. Sprinkle with seasonings. Top with oil. Cover. Cook on High
5-6 hours, or on Low 9-10 hours.

Note: I also added the juice of a half a lemon to this recipe.

Quick and easy answer. Put the chicken in the cooker, Add a can of Cream of Mushroom or Cream of Chicken soup. Of course you can add your potatos if you want . Set it on low and it will be done with lots of good gravy when you return. It is also good over noodles or rice.

It does not taste very nioce, chicken in a slow cooker. I don't know why. I would recommend roasting the bird.
