Sugar Cut-Out Cookies

My first cooking memory is of cutting these cookies out with my mother. If you have children, do take some time this holiday to bake some with them and make a memory that will last a lifetime. These cookies are always a hit with kids of all ages, and the decorated cut-outs are a lovely addition to a holiday sweet platter.

makes about 5 dozen depending upon the size of your cutters

3 1/2 cups sifted flour
2 teaspoons baking powder
1 teaspoon fine sea salt
1 cup unsalted butter
1 cup superfine granulated cane sugar
2 large eggs, beaten
1 teaspoon vanilla extract

1. Preheat oven to 350 degrees F. Have all ingredients at room temperature. Mix flour, salt and baking powder together in a bowl. Cream butter and sugar. Add eggs and vanilla, then the dry ingredients. Incorporate well.

2. Chill the dough. Break off sections of dough and roll fairly thin. Be sure to flour the table or board you are working on very well so your dough will not stick. Also, be sure to flour your rolling pin.

3. Cut out the cookies and place on an ungreased cookie sheet. Bake for about 8 minutes, until the cookies are very lightly browned and crispy. Remove to a wire rack to cool.

4. You may decorate the cookies before baking with jimmies or red or green sugar. Or, after baking, you may wish to frost the cookies with a thin coating of white milk frosting, and paint them with food coloring.

Frosting

2 cups sifted confectioner's sugar
at least 1/4 cup milk, and enough to make a smooth, spreadable frosting

How old are the kids? You might want to buy a mix and just add a few ingredients. If you want to do the whole thing:

3/4 cup sugar
1/3 cup butter, softened
1/3 cup oil
1 tablespoon milk
1-2 teaspoon almond extract or vanilla extract
1 egg
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon sugar (I use colored sugars)

Heat oven to 375º.
In large bowl, beat 3/4 cup sugar, butter, oil, milk, almond (or vanilla) extract and egg until light and fluffy.
Stir in flour, baking powder and salt; blend well.
Spread evenly in ungreased 15x10 baking pan; sprinkle with 1 tablespoon sugar.
Bake at 375º for 10 to 12 minutes or until light golden brown.
Cool 5 minutes.
Cut into squares.

Soft Sugar Cookies

2 3/4 to 3 cups flour
1 1/2 cups packed brown sugar
1 cup buttermilk
1/2 cup shortening
1 tsp. salt
1 tsp. vanilla (I usually use 2)
1/2 tsp. baking soda
2 eggs

Cream shortening and sugar and add eggs and beat well. Add combined dry ingredients alternately with buttermilk. Amount of flour necessary may vary according to the consistency of the buttermilk. Cover and refrigerate dough.

Drop by tablespoonsful onto lightly greased cookie sheet.

Sprinkle with sugar and bake about 10 minutes at 375 degrees.

You can also roll the dough into balls and roll the entire ball in a bowl of sugar.

Simple Sugar Cookies

1/2 c. butter, room temp (take out fridge, one hr ahead)
1 c sugar
1 egg
1 tsp. baking powder
1/4 tsp. salt
1 3/4 c. flour

Cream butter & sugar. Blend in egg. Add flour, baking powder & salt. Stir until combined. Drop by teaspoons onto greased cooky sheets 2" apart. Bake at 375 for about 12 min.

SURPRISE SUGAR STARS

1 cup butter, softened
1 1/4 cups sugar
2 eggs 1 teaspoon vanilla extract
4 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup buttermilk
1 can (21 oz) cherry pie filling

ICING
2 CUPS Confectioners' sugar
2-3 tbsp milk
1/2 tsp almond extract
Colored sugar, optional

In a mixing bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition Stir in vanilla. Combine the dry ingredients; add to the creamed mixture alternately with buttermilk.
Refrigerate for 2-3 hours until easy to handle. On a floured surface roll out dough to 1/4 in thickness. Cut with star cookie cutter or the cutter of your choice. Place half of the stars on ungreased baking sheets. Spoon 1-1/2 teaspoonfuls of pie filling into the center of each. Top with remaining stars. Pinch edges to seal; cut a small slit in top of each cookie. Bake at 350 for 12-15 minutes or until lightly browned. Cool on wire racks. For icing, combine confectioners' sugar, milk and extract in a bowl; whisk until smooth. spread over cookies. Sprinkle with colored sugar if desired. Yield: 4 dozen

this one is great with little kids:

1 cup flour
1/2 cup softened butter (not melted)
3 T sugar

squish all this together with your hands till it's smooth. You can squish in 1/2 cup of coconut or nuts, if you like. shape into little balls about the size of a walnut. bake on a greased cookie sheet for 15 minutes at 350. These cookies don't really spread much, and they don't brown much; but they're a quick, easy, sweet treat to make with kids.

look online and look for recipes with pudding mix in them ...they make the best softest cookies ever!!! you will love them if you like soft cookies:-)
