Bull Fighting (Originated many centuries ago by the traditional Roman circus when Spain was part of that empire). That tradition was brought then to Latin America where many countries still celebrate it.
There's also the festival of St. Fermin in which the bulls that are going to participate in the bull fighting events are released on the city and guided to the bull fighting arena (Plaza de Toros). The amazing thing is that many people run along with the bulls which make that festival very interesting.
