Toco Casserole
1lb ground beef
1can tomato soup
1cup milk
1cup salsa
1/2 cup chedder cheese
6 corn tortilla, cut in 1" pieces
brown beef and drain. stir in remaining ingredients. put in a casserole dish bake at 350 for 20-30min. sprinkle more cheese on top. serve with lettuce, tomato, olives, sour cream and more salsa if you like.

I'd give you my chili recipie... but then Id have to eliminate you.
It's a secret....
so Im going to go with Stuffed peppers.
I also make a great onion bread with ground beef in it.
Pizza dough
cooked and drained ground beef
2 whole sweet onions caramelized and cooked down to golden brown
colby jack and cheddar cheese mix
1 egg beaten for egg wash.
crumble some of the cheese, the cooked and caramelized onions and beef into a bowl. mix well add salt and pepper to taste.
roll out the dough spread a line of mixture across the bread about 1 inch from the edge and roll up and over that once. At the seam, repeat until you have a stuffed dough... full of mixture like a jelly roll.
WHen it is all full and all rolled up turn it out onto a sheet pan and bake it at 350 degrees with an egg wash on top.
Layer a few onion pieces and then some cheese on top before putting it into the oven.
It is yummy warm from the oven and cold the next day.

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Mild Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours or on high for 2-3 hours.

Spanish Meatloaf
Serves 6
1-1/2 lb Ground Beef, lean
1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)
Instructions:
Preheat the oven to 350ºF
In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.
Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.
Bake for 45 minutes; drain any residual fat if necessary.
Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Meat loaf:
One pound of ground beef (raw)
1/2 package of Ritz crackers (do not add salt, crackers have enough)
pepper to taste
garlic powder to taste
2 or 3 eggs enough to make the meat loaf stick together and should be a little wet and mushy
mix together well
form into a loaf
spread butter (real butter) all over the top & sides, etc.
bake in the oven on 250 degrees for 2 hours covered
in the last 20mins make a paste of ketchup, brown sugar and hot sauce and baste the top with it. becomes a glaze, the glaze is optional. place the meatloaf back in the oven for the last 20mins uncovered
remove allow to rest for 3-5 minutes and then slice. You allow it to rest so the juices do not run out and cause you to have a dry meat loaf. Good luck, hope you enjoy it.

Ground Beef Pizza Casserole
This can be made using bulk Italian sausages or use both! I have even layered in sliced onions, pepperoni, ham or whatever you desire on top of the ground beef mixture before adding the mozza cheese.
6-8 servings 1 hour 35 min prep
Change to: servings US Metric
2 lbs ground beef
1 onion, chopped
1 tablespoon fresh minced garlic
1 cup green bell peppers
seasoning salt
pepper (can use regular salt)
1 cup flour, divided
2 tablespoons flour, divided
1/2 teaspoon basil
1/2 cup grated parmesan cheese, divided
1 (15 ounce) can tomato sauce
2 cups canned sliced mushrooms
2-3 cups shredded mozzarella cheese
2 eggs
1 cup milk
3 tablespoons oil or melted butter
1/2 teaspoon salt
1/2 teaspoon garlic powder (optional)
Set oven to 350 degrees.
Grease a 13 x 9-inch bakin pan.
Brown the ground beef with onion, garlic, green pepper, salt and pepper until beef is no longer pink; drain fat.
Stir in 2 tablespoons flour, 1/4 cup Parmesan cheese and basil; mix well.
Add in tomato sauce; bring to a boil; cook stirring for 2-3 minutes.
Transfer the ground beef mixture to prepared baking dish.
Sprinkle mushrooms and then with mozzarella cheese.
At this point the casserole may be refrigerated and finished later.
Place the remaining 1 cup flour in a mixing bowl.
To the flour, add/whisk in eggs, milk, oil and salt until smooth; stir in 1/4 cup (or more if desired) cheese; mix to combine.
Pour over casserole.
Bake uncovered in a 375 degree oven for about 25-30 minutes, or until browned.
Delicious!

STUFFED CABBAGE LEAVES:
12 large cabbage leaves - cooked
1 1/2 pounds ground beef
1 cup cooked white rice
1 small onion - chopped
1 egg, beaten
1/2 teaspoon poultry seasoning OR thyme
2 teaspoon salt
1/2 teaspoon ground black pepper
2 Tablespoons oil
2 (8 ounce) cans Hunt's Tomato Sauce
1 Tablespoon brown sugar
1 cup water
1 Tablespoon lemon juice
Wash and place the head of cabbage in a large pot with water to cover. Cook over high heat. Boil cabbage over for 10 minutes, or until it is pliable and soft. Drain and allow to cool completely. Seperate leaves and remove the hard outer vein from the leaves.
In a separate large bowl, combine the beef, rice, onion, poultry seasoning, garlic powder and the egg, mixing well.
Place a small amount, about 1/2 cup, into the center of a cabbage leaf and fold leaf over, tucking in the sides of the leaf to keep meat mixture inside. (Some people use toothpicks to fasten them)
Heat the stuffed cabbages in oil of large pot or skillet, (I use an electric frying pan) putting any extra leaves on the bottom. Pour in the tomato sauce. Combine lemon juice, brown sugar and water. Stir into tomato sauce. Simmer covered, over medium-low heat for about 60 minutes.
Baste occasionally. (Keep an eye on them, making sure the bottom of leaves do not burn.)
Note: I have also baked these in the oven; covered with aluminum foil at 350 degrees for about about 60 minutes or so.

We call this "Fake Stir-Fry" :-))
Brown the ground beef, with any seasoning that you like. I like teriyaki sauce, or Liquid Smoke, or soy sauce.
Add a bag of the frozen mixed veggies of your choice.
Add the noodles from a package of Ramen noodles. Do not use the seasoning packet if you already seasoned the beef. Add about half the water called for on the Ramen noodle package.
Stir and cook until the noodles are cooked and the veggies are hot!
Simple, quick, cheap, and easy! :-))
You can substitute boneless skinless chicken breasts, sliced or cut into chunks, or beef stew meat (beef chunks) for the hamburger.

Shepard's pie:
Brown 1 pound ground beef { in a large cast iron pan if you have one}, drain grease rinse.
add Mixed frozen veggies,onions,{ I prefer green onions} Mushrooms{ If you like them} cook until veggies are soft. Then add 1 or 2 cans mushroom soup, half to whole can of water. let simmer. {I use garlic and salt+ pepper to taste for spices}
while this simmers boil enough potatoes to cover the top of a casserole dish when mashed{ about 6 large ones}or your cast iron pan if using one. Mash potatoes well , poor meat and gravy into dish spread mashed potatoes on top to make a crust. and bake until potatoes are a little brown { about 15 mins @ 400f} If using cast iron no need to use another pan spread potatoes on top of that. You can also use rice or baking powder biscuits for you top.

Cheeseburger Soup
1 lb. ground beef
1 chopped onion
1 C. shredded carrots
1 C. chopped celery
3 C. chicken broth
4 C. diced potatoes
1/2 C. flour
2 C. shredded cheese (I use sharp cheddar)
1/2 C. milk
1 tsp. basil
1 tsp. parsley flakes
Brown the beef, drain, set aside. Saute onions, carrots, celery, basil, parsley in a tablespoon of butter until tender. Add broth, potatoes, beef and bring to a boil. Reduce heat and simmer covered for about 10 minutes.
Melt remaining butter, add flour and cook about 3 minutes. Add to soup, bring to boil for another 2 minutes.
Reduce heat to low and add cheese, milk, salt and pepper to taste.
After putting soup in a bowl, top sour cream.
This is one of my favorite soups! Enjoy!

In cooler weather, I love to make my "Hobo Jo's" after a long day @ the office. Take 1lb hamburger & pat out two good size patties - medium to medium thick. Sprinkle with Montreal Steak seasoning or your favorite steak spices. Place in center of a large piece of foil. Cover with sliced potatoes, rings of onions - sliced medium thin, sliced mushrooms & baby carrots. Sprinkle a few dashes of worchester sauce & a small pat of butter. Fold up, seal & bake @ 350 for about 30 - 40 minutes. Serve with garlic bread. Enjoy!!
