Peanut Butter Fudge
Yield: 64 (1-inch) pieces
1 cup butter, plus more for greasing pan
1 cup peanut butter
1 teaspoon vanilla
1 pound powdered sugar
Microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes. Add vanilla and powdered sugar to peanut butter mixture and stir to combine with a wooden spoon.
Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week.

Jody's Peanut Butter Fudge
4 cups sugar
1 stick margarine
1 large can evaporated milk (not sweetened, condensed)
1 pint marshmallow cream
2 large globs peanut butter (she used less than ½ cup)
¾ c. ground walnuts
1 tsp. vanilla
Jody wrote: It is necessary to cook the fudge a bit beyond the soft ball stage, because the oil in the peanut butter tends to keep it from setting up. I also put a little more than the pint of marshmallow called for. I think it makes for creamier fudge. This makes a large 13x9" pan. Once cut it keeps for weeks (fat chance ) in the refrigerator. For chocolate fudge, add a large package of chocolate chips.
Place the sugar, margarine and milk in a saucepan. Boil this until it forms a soft ball; then continue to cook two more minutes. Remove from heat and add the marshmallow cream, peanut butter (or chocolate chips) and vanilla. Mix well until the peanut butter or chips are melted and the mixture smooth; add the nuts. Pour into the 13x9" pan and let set up before cutting into squares.

Favorite Peanut Butter Fudge
A favorite peanut butter fudge recipe with peanut butter, sugar, optional and nuts.
INGREDIENTS:
2 cups sugar (half brown sugar if desired)
1/2 cup evaporated milk
2 tablespoons light corn syrup
1/4 teaspoon salt
1 teaspoon vanilla
1/2 cup peanut butter
1/2 to 1 cup chopped pecans or walnuts, optional
PREPARATION:
Mix sugar, salt, syrup and milk in pan. Bring to boil slowly.
Cook until small amount forms soft ball in cold water, about 235° on a candy thermometer. Remove from heat, add peanut butter and vanilla
Do not stir. Cool to lukewarm then beat just until creamy, losing gloss and beginning to hold shape. Stir in nuts if used. Pour into a buttered loaf pan or 8- x 8-inch pan and cool. Cut in small squares.
*To Test for Soft Ball Stage
A small amount of syrup dropped into chilled water forms a ball, but is soft enough to flatten slightly when picked up with fingers (234° to 240°).

this was given to me by a friend and i dont have or use a mocrowave....1 cup butter and some extrea to grease dish1 lb powder sugar 1 tbsp vanilla 1 cup crunchy peanut butter nuke butter and peanut butter for 2 min then stir nuke 2 more min....add sugar and vanilla and mix throughly...pour into a greased 8 by 8 glass dish i guess a pan ok...stick in fridge...
