serves 4
30g butter
1 tablespoon sunflower oil
750g rump steak - cut into strips
8 shallots cut into quarters
300g button mushrooms halved
salt and pepper
300ml soured cream
melt butter and when foaming add meat cook on high heat for 5 mins or until browned. Remove with slotted spoon.
Add the shallots and mushrooms and cook for about 5 mins until soft and browned.
Return the steak to the pan and add salt and pepper to taste.
Stir in the cream and heat gently.
Serve at once with rice.
Easy - (there is no sherry in Stroganoff) it is a classic Russian dish, known in Europe since the 18th century. It takes it's name from the Stroganoff family from Novgorod - the family had a French cook.
So now you have something to talk about at the table too!!!

Stroganoff can be simpple
Dice and brown your beef.
Boil your noddles.
Add 1/4 cup flowwer to the pan with the beef juices.(do not bother taking beef out.) Mix in 2 cups milk. Add a small can of cream of mushroom soup . let thicken. If it is too thin mix a small amount of slurry together(flower+milk) and add it to the mix. add nooddles and serve.

Cheesy Beef Stroganoff
Ingredients
1 lb. ground beef
2 cups water
3 cups (6 oz.)medium egg noodles, uncooked
3/4 lb. (12 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up
1 can (10-3/4 oz.) condensed cream of mushroom soup
1/4 tsp. black pepper
Preparation
BROWN meat in large skillet; drain.
STIR in water. Bring to boil. Stir in noodles. Reduce heat to medium-low; cover. Simmer 8 minutes or until noodles are tender.
ADD prepared cheese product, soup and pepper; stir until prepared cheese product is melted.

Quick Turkey Stroganoff
Makes 4 servings
Ingredients:
4 cups turkey broth either home made (see recipe on Monday) or use Roasted Turkey Stock Reduction plus 4 cups hot water
1/4 cup dried porcini mushrooms
1 pound fresh mushrooms (small porcini or button mushrooms)
2/3 cup sour cream
1/2 cup chopped fresh chives
2 cups cooked turkey breast meat shredded (leftovers)
fresh ground pepper to taste
Preparation:
Heat 1 cup turkey broth and pour over the dried porcini mushrooms in a small bowl. Soak for 20 minutes, strain the liquid through a fine sieve and reserve. Mince the mushrooms.
Add the remaining turkey broth to a large saucepan and add the minced mushrooms, reserved liquid and pepper to taste. Simmer over a medium heat for approximately 20 minutes or until the broth is reduced by half.
Add the fresh mushrooms and simmer for 5 minutes.
Stir in the sour cream, and chives, then add the shredded turkey, simmer for 3 to 5 minutes and serve over egg noodles or rice.
Hamburger Stroganoff
Ingredients:
1 pound hamburger
1 onion, chopped
1/4 cup butter
2 tablespoons flour
1 tablespoon salt
1/2 tablespoon ground pepper
1 clove garlic, chopped
1 can cream of chicken soup
1 cup sour cream
2 cups cooked egg noodles
Preparation:
In large skillet brown hamburger and onion in butter until onion is tender. Stir in flour salt, pepper and garlic. Continue to cook for 5 minutes, stirring occasionally.
Remove from heat, stir in soup and simmer for 10 minutes. Stir in sour cream, do not let the mixture boil. Add cooked noodles.
Porcini Stroganoff
Ingredients:
1 pound fresh porcini mushrooms
2 tablespoons butter
1 tablespoons olive oil
3 garlic cloves, finely minced
1/2 cup chicken broth
1/4 cup parsley
salt to taste
1/2 cup sour cream
2 cups of cooked egg noodles, hot and well drained
Preparation:
Wash mushrooms and cut in half. If the mushrooms are small, leave whole.
Melt butter and oil in frying pan over moderate heat. Cook garlic until it just starts to color. Add mushrooms. Cook for a few minutes, stirring until lightly browned. Remove mushrooms from the pan and keep warm.
Add the chicken broth to deglaze the pan and cook uncovered, for 10 minutes or until liquid has reduced by 2/3. Add parsley and season with salt. Remove pan from heat. Cool for 3 to 4 minutes. Stir in sour cream and incorporate.
Add in mushrooms and pour over the top of the noodles and serve
Roast Beef a la Stroganoff
Ingredients
(4 servings)
1/2 c Chopped celery
1 Onion, chopped fine
1/4 lb Mushrooms, sliced
1/4 c Butter
1/2 c Flour
1 ts Soy sauce
1 1/2 c Beef bouillon
1 c Sour cream
2 c Thinly sliced roast beef,
Cooked
Instructions
Cook celery, onion and mushrooms in butter until tender. Stir in flour and soy sauce. Add bouillon; cook, stirring until thickened. Stir in sour cream. Add beef and heat through. Serve with hot cooked rice or noodles.
