I am looking specifically for ph at harvest, brix at harvest, and acid at harvest for different wines. Is there a website that contains nutritional information anywhere?

I have found some of the info on the manufacturers website. I needed the info for a class in wine production. The prof said that the better the quality the wine, the more information that would be available about it. Especially for small batch wines the information is easier for the manufacturer to keep track of.

Depends on the winery/winemaker - whether or not they want to provide that information.

A fair and detailed source of information - try wine magazines... specifically the wine newsletter - The Wine Advocate by Robert Parker.

Occasionally if the winemaker will offer the information - it will be in his tasting notes.

Additionally you can try Wine Spectator - again depends on the winemaker and the vintage.

I have a ton of books that have that info. Try local wine governing bodies and specific winery sites. Boring as heck to read through but it might help you.

You're looking for the information that wineries use to make their product unique and distinctive. When you get this info, which I'm sure they're glad to hand out, maybe you should get the formula for Coca Cola.
