There are a few that you can choose from. Go here and it will show all the enlisted crew member AFSCs. I think the one they are hurting for the most is Flight Engineer.

I have 16yrs in the Navy and have been to several AF bases over the years. The AF are specialists in what ever there job is. Example. When I first got in the Navy I was an AMS (Air-framer). We maintain the structure of the A/C, also it wheels, tires, landing gear, hydraulics, etc. If our our shop isn't busy the Chief will send us to help the mechs. In the Air Force you will be a tire specialist for example and just work on that. On a ship/squadron people and supplies are slimmer than on base, so you need to be more diverse. Also our advancement tends to be fast because of guys getting out. The Air Force has better retention, which means slower advancement. Both are great, but there is a different mentality. Our lingo's are different, logistics. Example: I went to PSAB (an air force base) for 6 months. We worked 12 on 12 off, they worked 8hr shifts. They have guys that due security, we stand duty after work hours. We due things on land just like we are on the boat. So you may work 12hrs, then stand a watch for 4 to 8hrs after. Then you will sleep and come back to work. I also did an air show at an AF base, and my squadron sent 1 LT, a Chief, and 5 of us E-6> to do the show. My LT was prior enlist AMSC (aviation structural mech), so he was hand on right there with me working on the A/C. We would bang the work out then hit the bars. Coming back on base drunk, my Chief told an E-4 gate guard that was giving us a hard time "if you shot me I'll kill you". In general I think you will get better work skill, and have more fun in the Navy. If you want a career go with the AF. If you go Navy get into an Aviation rating. The food jobs you will be an CS rating and that is not good unless you are Filipino or black. The Constuction jobs (Seabee's) are great!

Despite the name "Air Force," we don't have a lot of helicopters in the Air Force. About the only enlisted position in helicopters is a Pararescueman. Not sure of the MOS number...but just tell your recruiter, he will know. It is about the most elite enlisted specialty...tantamount to Navy Seals, or Green Berets of the other services.
If that doesn't float your boat, and you still want to fly, check out loadmaster positions on transport planes, boomer on KC-135 tankers, or even go into weather and be a dropsonde operator with the C-130 Hurricane Hunters.
If you really, really must do helicopters, the Army would be your best bet, as they have the most...but as a former AF guy who has done his share of time in Army support roles, I really wouldn't recommend it, lol!

In the AF, MOS is called AFSC. If you follow the link it will give you the AFSC's of most of the jobs in the AF. Once you find an AFSC that interests you, do a search in about.com and you will get a complete job description, requirements, where the school is and how long it will last. Good luck, the AF is the right choice!
By the way there are a lot of jobs in the AF that do not deal with aviation!

Load master on a C17 will work for you, but in flight you're sort of a "flight attendant." Look into a boom operator on the KC10 or KC135. You'll fly, travel, refuel aircraft while in flight, get great pay, and you don't have to deal with passengers very often.

I'v known a few load masters, they all loved their jobs and they were all in the AF for life and were honored to serve our country. Bless you for serving our nation.
