I would say that you know his interests, so go from there. Wheither he's partying with his friends in the early evening and having a hot night with his wife or to getting all of his close friends together and going out to eat at his favorite place or drinking at his favorite pub.

when my husband turned 30, I told him I was going to take him out for dinner like to the diner or something simple and that I would drive. (Of course he was like yeah right I'm driving)
Outside our house I had a limo waiting. he didn't think it was for us but the Driver said "Mr. So and So" and opened the door. When he got inside the limo I had 2 of his buddies there who screamed happy birthday. We went out to a fancy dinner and of course I treated everyone.

How about a voucher for a sky dive/parachute. Totally depends what he's into. What about arranging a few laps in a ralley car at a local track. Super fast ones.
