Like everyone else said. Cucumber is traditional.
I like
watercress
spinach
smoked salmon (lox)

you could also have tea cakes or scones or those nasty biscuits i think they are called crumpets. and most any kind of hors d'oeuvres will do.

Any kind of finger sandwich will do, though cucumber sandwiches are traditional (don't really like them, myself). Some other ideas for sandwiches include thinly sliced smoked salmon with chive cream cheese, a chicken curry spread, or prosciutto and fontina. Don't forget you can do individual pastries as well; they're quite traditional. Tea cakes, crumpets with clotted cream and jam, or bite-sized fruit tartlets are good, and if you go to a warehouse store like Costco or Sam's Club, in the freezer section you should be able to find frozen mini-quiches that bake up in 15 minutes and feed the Foreign Legion.

chicken salad; cucumber - you can do a search for tea time recipes. Also check out Tea Time Magazine. You can pick it up at Barnes and Noble. There are also some lists on yahoo - afternoontea@yahoogroups.com for one.

High Tea is a sit down meal with heavy food. Afternoon tea is where you have tea sandwiches, scones, petit fours and of course tea.

Like others have suggested I have done cucumber sandwiches, tomato, salmon sandwiches, chocolate hazelnut sandwiches, petit fours, mini cheese cakes, assorted breads and jams. Plenty of English Tea , honey etc...

Earl gray is the classic afternoon tea, yet i won't be able to stand the stuff! the excellent tea type interior the united kingdom, in my humble opinion, is the two PG training or Yorkshire tea! i'm ingesting some suitable now! With milk of direction......

i would cut all the crust off and make them into little finger sandwiches, cut into triangles like they do at tea shops.

you can do cucumber and cream cheese, smoked salmon and dill

if you are posh it would be cucumber sandwiches, but if I make afternoon tea I would serve tuna and cucumber or ham and peas pudding etc.
