Kim Chee is the well known symbol of traditional Korean food. Extremely popular in the United States, it is a spicy, fermented pickle/condiment that accompanies many meals. Sliced Chinese cabbage, radishes, shrimp, and sometimes anchovies are highly seasoned with red pepper, green onion, ginger, and garlic, then stored in jars to ferment for weeks before it is ready for consumption. Jo-San's Kim Chee is available in 2 tasty flavors: Mild or Hot. A low-cal treat that is all-natural and contains no preservatives or MSG, Kim Chee can be added to sandwiches, soups, stir-fries, or any dish that needs a spicy kick.

Kimchee comes in two basic varieties. One type is made of cabbage with a lot of red pepper and whatever else you throw in. I made some with a Korean lady's help and it came out great. When I tried it on my own it was awful.
The other kind is made from these huge white radishes they have. It's called water kimchee and it's much milder.

Essentially it is softend cabbage stuffed with garlic, peppers, salt and other spices that the Korean people jar and bury in the ground. After about six months they dig it up and eat it. It is very hot and pretty nasty, but my Father in law loves it, so what do i know.
