Never heard of American fries but I know the other two, at least what I had growing up.
Basically, it's in the cut and the frying method
French fries are cut from the potato long ways so are long and slender. They are generally cut thin and deep fried.
Country fries or what we used to call country fried potatoes are cut cross ways and come out like a small disk. They are generally pan fried, sometimes with onion. Yumm, yumm.

it all depends on the way they are made. American fries and French fries are the same, but country fries are usually prepared in a deepfryed fashion other then the conventional cooking method of American/French fries.
