Easy Lemon Pudding
2/3 cup sugar
1 1/3 cups water
5 teaspoons cornstarch
1/4 cup lemon juice
1/4 teaspoon lemon extract
1/4 teaspoon salt
3 egg yolks
On med-hi heat, bring sugar and water to a boil. Mix cornstarch, lemon juice and lemon extract. Stir into boiling mixture. Beat the egg yolks and stir about 1/4 cup of the hot mixture into them. Quickly stir this into the hot mix.
Spoon into dessert cups. Chill.

The main problem with making homemade lemon pudding is that it takes so much time to get all the stuff together and then the recipe only makes 4 or so servings. Save a bunch of time by making your own Pudding Mix!
Lemon Pudding Mix--Or Any flavor your kids like!
2 1/2 cups presweetened powdered drink mix Kool-ade Lemonade flavor or any other flavor!
1 cup plus 2 tablespoons corn starch
1 1/4 cup additional sugar.(Pudding needs to be sweeter than drinks are.)
1 tsp. Salt
In a large bowl mix all ingrediants together until well blended. Put into a 1 quart air-tight container. Use in 6-8 months. Makes about 4 1/4 cups of mix.
To make pudding:
In a large sauce pan combine:
1 1/4 cup Pudding Mix
1/2 cup of water
3 egg yolks.
Mix until smooth. Add 2 more cups of water and cook over medium heat for 4-6 minutes until mixture is thick and bubbly. Remove from heat and stir in 2 tablespoons of butter or margarine. Let cool for 5 minutes, stirr well and then pour into serving bowls or into a prebaked pie shell for Kool-ade Pie. Chill for 3 hours. Top with a dollop of whipping cream! YUM!

Here's one for you... And NO cake mix.... Ingredients: 2 cups biscuit/baking mix 1 package (3.4 ounce size) instant lemon pudding mix 1/4 cup poppy seeds 1/4 teaspoon grated lemon peel 2 eggs 1 cup milk 1/4 cup vegetable oil 3/4 cup confectioners' sugar 1 tablespoon lemon juice Directions: In a large bowl, combine the baking mix, pudding mix, poppy seeds and lemon peel. In another bowl, combine the eggs, milk and oil; stir into dry ingredients just until moistened. Fill paper-lined muffin cups two-thirds full. Bake at 375F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. In a small bowl, combine confectioners' sugar and lemon juice; drizzle over muffins. This recipe for Lemon Poppy Seed Muffins serves/makes 12 Hope this helps! Dave

Jell-o pudding mix. Sorry that is all I know. One time my Mom cooked it wrong and it came out like little bowls of yellow rubber. We never let her forget it and even made a comical instruction book on how to screw up lemon pudding including things to use the rubber pudding for. She eventually did it the right way but it wasn't nearly so much fun. She over cooked the sweet potatoes at Thanksgiving once and we all called them sweet potato chips. Too bad that such a good cook got a bad rap for us only remembering stuff like that, eh?
