The Holy Eucharist was instituted by Christ Himself. It is a sacrament that we are commanded to celebrate to honor Him, and it is a sacrament where Jesus gave Himself to us under the appearence of bread and wine as food for our souls. The Holy Eucharist is Jesus Christ, Himself, in the flesh. It is not a symbol, it does not just represent Him, or is nothing more than a reminder. It IS Jesus, body, blood, soul and divinity. Please note that the only way to receive the Holy Eucharist is at the Catholic Church. The priests and bishops ordained are the only ones with the authority to consecrate the sacred host. No one outside of the catholic church can do this.
Also, can you think of a another gift more precious, more holy, than the gift of Jesus Himself? Can you imagine being able to see Him every Sunday, IN PERSON, at holy Mass?

I don't think there is any historical development. It was the Last Supper and it was actually a Passover Sader
