best to use coloured fish, eg Tuna and Salmon fish as that is tastier than white fish meat.
Just slice into rectangular cubes 2" X 1 or 1/2 inch thick.
Place on plate with sauce:
Mix 2 tablespoons of fine Japanese Soy with a dash or water and a half teaspoon of green Wasabe (horseradish paste)
Place some preserved sweet Ginger slices on the plate as well.
This way, the fish cube is dipped into the soy sauce already mixed with the "hot" wasabe, so the flavour has a nice "bite' to it.
Then take some sweet ginger for contrast.
Serve with hot deep fried battered vegetables & tofu cubes.

As long as it is super fresh, there isn't much prep involved. Look for sushi grade fish in your local gourmet grocery store (Henry's, Bristol Farms, etc.) or Japanese market.
