How do they bake the sponge on the ice cream without it melting?

I thought you covered it in meringue, not sponge?? Isn't sponge round ice cream an Artic Roll???

There are many diffetrent recipes for baked alaska. When made in a factory, like the answer above says, the ice cream is extra cold and the oven is extra hot (the sponge is a pretty good insulator). At home, it can be done in the oven with raw sponge mix or swiss-roll style with the sponge baked flat in a tray, then rolled around the ice cream, but that's cheating!

They don't bake the sponge on the ice cream --it is baked separately and then the ice cream plus sponge are hardened in the freezer together to ensure that they are really firm before being coated with the meringue. We are talking about baked Alaska? With a meringue coating?

The sponge is already cooked. You slap a load of ice cream on top, and cover it all with meringue. The air in the meringue stops the heat melting the ice cream (a bit like insulation). Make a VERY yummy pudding.

You have to make and bake or buy the sponge first. Put this on a baking tray and add fruit or jam and the the ice cream then your meringue. Make sure the meringue totally covers the sponge and ice cream and then bake in a very hot oven about 220c until the meringue in brownish

You use a ready cooked and cool sponge spread with raspberries put ice cream on and coat it with meringue the meringue acts as an insulator so the ice cream doesn't melt when it goes in the oven.

Baked Alaska


Baked Alaska recipe made with ice cream, sponge cake, and meringue.
INGREDIENTS:
2/3 cup sugar
5 egg whites, room temperature
1 layer sponge cake
1 brick chocolate, strawberry, and vanilla ice cream or other flavor, very firmly frozen
PREPARATION:
Beat egg whites until foamy. Gradually add the sugar to egg whites and beat until meringue forms stiff peaks. Cut sponge cake 1 inch larger than the brick of ice cream. Spread meringue over the ice cream and the cake, taking care to seal completely so no ice cream is exposed.

Baked Alaska is a wonderful desert, Firstly make your sponge. allow to cool, Whisk egg whites and sugar to make meringue. Myself I always marinade sliced pears in creme de men-the. Place them on the sponge Put frozen ice cream on pears, cover with meringue, Bake in hot oven for 5 minutes, Serve strait from the oven with a chocolate/cherry brandy sauce, pure Heaven

the ice cream has to be covered in meringue then baked for about 5 mins in a very very hot oven then served straight away

In addition to all the excellent answers above, the ice cream is frozen to much harder state than you and I keep it in our homes. This delays the melting time as well as the quickie browing broil of the meringue.
