My husband and I are both Italian. I have always thought that the Spanish and Italian cultures blended well. Lots of family, food, and festivity. Our traditions, believe it or not, are pasta dinners with the family. Of course the parents on both sides will want to bless you with the most expensive gift they can afford (italians are no different than the spanish on that :) ) If you want to make it special by making sure that each family's traditions are included, then don't be afraid to ask. I know my mom & mother-in-law love it when we want to pass on family traditions. They will be happy to fill you in on what their families are all about. Trust me, no italian family will turn down a big family affair. :)

Your mom and his are both likely a little disappointed they were not at the Vegas wedding so don't leave them out here. Tell them you want to combine traditions of both the Spanish and the Italian. Let them work things out by phone if need be. Combining both traditional methods of celebration will make it a memorable affair for all. WHAT A PARTY! "Can I come too?"

This may be a stereotype, but I always assumed Italian love a big celebration as much as hispanics. I do not think they will object to a big wedding, infact i believe they will be disappointed if you don't.
