I am looking for a meat loaf recipe using oatmeal NOT bread or cracker crumbs and that is NOT tomato/ketchup/bbq sauce base/topping. Thanks

You can substitute any meatloaf recipe. If it calls for 1/2 c. crushed cracker crumbs, just use 1/2 c. oatmeal instead.

As for the topping--you can leave that off totally. I make a great meatloaf that has ketchup IN it, but not ON it, and you really can't taste the ketchup that's baked in. If it's a tomato allergy, you can substitute with something else. A little bit of milk, a small bit of chicken broth, etc. Or, you can just leave it out totally. The top of the meatloaf is naked. I'll post it below, and you can substitute accordingly if you want to use it. Everyone who has eaten it raves about it and wants the recipe. :)

1 1/2 pounds lean ground beef
1/2 cup crushed buttery round crackers (OR oatmeal!)
3/4 cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup (or chicken broth, beef broth, milk, etc.)
2 tablespoons steak sauce

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, stir together ground beef, crushed crackers, cheddar cheese and onion soup mix until well combined. In a separate bowl, stir together eggs, ketchup and steak sauce until smooth. Stir the egg mixture into the beef mixture, adding a little water if necessary. Shape into a loaf and place in a 9x5 inch loaf pan.
Bake in preheated oven 45 to 60 minutes, until no longer pink.

My kids beg me to make this meatloaf & any leftovers are gone the next day! If I'm out of crackers, I just use breadcrumbs, crushed chips, oatmeal - whatever I happen to have on hand. 2 1/3 cups coarsely crushed soda crackers (1 1/2 tubes from package) 2 pounds lean ground beef 1/2 pound ground sausage 1 large egg 2 medium onions, chopped 1 medium green bell pepper, minced 3/4 cup ketchup plus 1/4 cup for the top 1/3 cup Worcestershire sauce 1 teaspoon salt 1/2 teaspoon black pepper Preheat the oven to 325 F. In a heavy-duty, plastic food-storage bag, place the crackers, seal, and roll over with a rolling pin until crushed but not powdery. In a large bowl, with clean hands, mix together all the ingredients except the 1/4-cup ketchup for the top. Mix thoroughly but lightly, being careful not to pack the meat too much. Place in a 13 x 9 x 2 inch baking pan and shape into a loaf. Cover with aluminum foil. Bake for 45 minutes. Remove the foil. Spread the top of the loaf with the 1/4-cup ketchup. Bake, uncovered, another 60 minutes. Let stand for 10 minutes before slicing. Makes 10 Servings.

I make meatloaf without any of the mentioned liquids. I also sometimes throw in rice with the oatmeal. Use meduim hamburg so that it isn't to dry and an egg, put in spices of your choice to taste ie: Italian seasoning, cumin, garlic salt or powder etc, etc - any spice you like. Don't forget about onions or even use the spice or flakes and real garlic is usually better. I also use worchestire sauce and/or soya sauce and maybe a little hot sauce. I don't measure so it depends on how much meat you use and as I said - to taste. Sometimes what is good is put a cream soup on top, like cream of mushroom or celery or the cheddar cheese. Another excellent recipe is the Uncle Ben's Stuff and Such Country Style flavour and the recipe is on the back. A good recipe website is www.allrecipes.com, I have tried a few recipes from there that are good and there is tonnes of them. Good Luck!

Onion Meatloaf
Prep Time 10 minutes
Cooking Time 50 minutes
Serves 12

Ingredients

6 cups yellow onions, diced 1/4 inch
2 tablespoons salted butter, or margarine
1 teaspoon salt
1/2 teaspoon ground black pepper, fine
2 teaspoons thyme, dried leaves
2 cups oatmeal, regular
3/4 cup milk
1/4 cup Italian parsley, minced
3 eggs
3/4 cup ketchup
2 tablespoons soy sauce
1 tablespoon beef base
1 tablespoon garlic, minced
1/4 cup steak sauce
4 cups lean ground pork, (2 pounds)
4 cups extra lean ground beef, (2 pounds)

Directions
Preheat oven to 350 degrees.

In a sauté pan, combine the onions, butter, salt, pepper, and thyme and cook over medium heat for 6 to 8 minutes until translucent and just beginning to brown. Remove from the heat and set aside to cool slightly.

In large stainless steel bowl, combine the oatmeal and all remaining ingredients except the ground meat. Mix well to combine.

Add the cooled onions, mix well, and then add the ground meats. Using your hands or a wooden spoon, mix well.

Divide the meat evenly between two standard 9 x 5-inch loaf pans. Pat down the top of loaves to shape. Bake for 50 minutes to one hour until the internal temperature reads 165 degrees F. Let the meatloaf rest for 15 minutes at room temperature before serving.

Chicken Meat Loaf:

2 eggs
2 tablespoons Dijon mustard
1 tablespoon olive oil
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon plus 2 teaspoons tomato paste
3 garlic cloves, peeled
1 small yellow onion, quartered
1 small carrot, peeled and cut into large pieces
3 steamed chicken-breast halves pounded to 1/4-inch thich
2 scallions, thinly sliced
1/2 Golden Delicious apple, peeled and grated
1 cup bread crumbs
1/3 cup shelled pistachios
3 tablespoons maple syrup

Heat oven to 400°F. Lightly coat a 9-by-3-inch loaf pan with cooking spray and set aside.

In a large bowl, whisk together the eggs, mustard, oil, salt, pepper, and 1 tablespoon of the tomato paste. In a food processor, chop the garlic, onion, and carrot until finely chopped. Transfer to the bowl. Finely chop 2 chicken-breast halves (about 1/8-inch dice), and cut 1 chicken-breast half into 1/2-inch pieces. Add to the bowl along with the scallions, apple, and bread crumbs. Using your hands, mix to combine well.

Place half the meat-loaf mixture in the pan. Sprinkle on the pistachios in 1 layer. Top with the remaining meat-loaf mixture, pressing gently. Bake for 20 minutes.

Meanwhile, whisk together the maple syrup and remaining tomato paste. Brush the glaze over the meat loaf and return it to the oven for 10 minutes. Remove and let rest, covered with foil, for 10 minutes before serving.

Yield: 4 servings

I like to mix up my meatloaf when I am ready to put it into the loaf pan, I only put in 1/2 of the meatloaf mix. Then I make a little well in the meatloaf and fill it with cheese all kinds, American cheddar Italian cheese what ever I have on hand. Put the rest of the meatloaf over the cheese and press well to contain cheese. After cooking allow to cool for about 10-15 minutes before cutting, it will taste really good. I like to put either gravy or tomato sauce on it hope you will try this it's great. have fun cooking!

Ingredients

Directions

Preheat oven to 350º F.
In a large bowl, combine sausage and ground beef. Add onion, garlic, egg, oatmeal, tomatoes, salt, and pepper. Stir until well combined. Pour into prepared loaf pan.
In a small bowl, blend brown sugar, mustard, and catsup. Pour mixture over meat loaf.
Bake for 1 hour. Remove from oven and drain excess liquid. Serve hot.

Philly Cheese Steak Meatloaf

1/2 cup chopped onion

1/2 cup chopped green or red bell pepper, or a combination

2 garlic cloves, minced

2 teaspoons olive oil

1 1/2 pounds lean ground beef

3/4 cup oats (quick or old fashioned, uncooked)

1/2 cup tomato sauce or ketchup

1 egg, lightly beaten

1 teaspoon salt

1/2 teaspoon pepper

3 slices provolone cheese, cut in half

Topping

1 large onion, thinly sliced

1 large green or red bell pepper, or a combination, thinly sliced

1/2 teaspoon salt

1 tablespoon olive oil

Heat oven to 350 degrees.

Cook onion, green pepper and garlic in oil in medium skillet until tender.

In large bowl, combine ground beef, oats, tomato sauce, egg, salt, pepper and onion-pepper-garlic mixture; mix lightly but thoroughly. Shape mixture into 5-by-8-inch loaf on rack of broiler pan.

Bake 50-55 minutes or until center of meatloaf registers 160 degrees on an instant-read thermometer. Arrange cheese on top of loaf, overlapping slices; bake an additional 5 minutes or until cheese has melted. Let meatloaf stand 5 minutes before cutting.
