My son is a fussy eater so won't eat veg or rice or pasta
but he likes salmon steaks and potatoes do you know any
good recipees please

V-8 Salmon

1 or 2 salmon steaks
1/4 tsp salt
paprika to taste
8 oz can V8 veg juice
1 tsp lemon juice
1 TBS butter

Preheat oven to 375. Line baking sheet with foil and spray with cooking spray. Put salmon fillets on baking sheet and sprinlke with s&p. Bake until fillets are cooked through (15-20 min) Meanwhile in small pan, bring V8 to a boil and reduce to simmer and cook for about 5 min. Turn off heat and add lemon and butter.When fish is cooked, place on plate with veggies and rice. Serve with V8 sauce.

Basil Caesar Salmon:
4 salmon fillets
1/4 c caesar dressing
pepper
1 c caesar salad croutons, crushed
1/2 c grated parmesan
2 tsp dried basil
2 TBS OO

Place salmon in greased pan. Spoon the salad dressing over fillets; sprinkle with pepper. Combine croutons, parmesan and basil. Sprinkle over fillets and gently press into dressing. Drizzle with OO. Bake uncovered at 350 for 15-20 min.

Baked Salmon:
1 Salmon steak, can cut into cubes, portions, or leave whole
Spicy mustard
parsley flakes
bread crumbs

Spray bottom of pan. Place steak in pan, skin side down. Spread mustard generously on salmon. (top and sides) sprinkle w/ s&p, parsley to taste. Cover in bread crumbs. Bake at 400* for @10 min or until done

Salmon Steak
You can also do this with tuna steak





4 ounces salmon steaks
1 tablespoon oil
1 teaspoon lemon juice
1/8 teaspoon pepper


Lightly oil a large piece of aluminum foil and arrange salmon in single layer.
Sprinkle with lemon juice and pepper to taste.
Fold foil over salmon and seal, place on baking sheet.
Bake in preheated 400 degree oven for about 15 minutes or until fish is opaque and flakes easily with a fork.

MARINATED SALMON STEAKS OR FILLETS

(When using fillets, I usually remove the bottom skin of the fish since it makes it easier to marinate throughout.)
Spray the bottom of the pan with Pam (or whatever) and sprinkle a small amount of garlic powder over it. Lay the fish on the pan and sprinkle the top with a little garlic powder. Mix up marinade:


1/3 seasoned rice wine vinegar, lite (Kosher)
1/3 water
1/3 teriyaki marinade

(It can be tablespoons, 1/8 cup, 1/4 cup, etc., each, depending on the amount of fish you are using.) Pour marinade over fish and let stand for half the time you are marinating, then turn over the fish and marinate the other side for the balance of the time. Or use a sealed plastic bag and turn it over.
Preheat oven to about 375 degrees; spoon a little marinade over the top of the fish, sprinkle either dried parsley flakes (crushed), or dried dill weed or freshly snipped dill over the top of the salmon, bake between 10-15 minutes (depending on the thickness of the fish), then put under the broiler for 3-5 minutes. If you have a lot of thick fish, you may need more time, just use your judgment. Enjoy! (The mahi-mahi was done the same way except that I crushed some tarragon with the parsley and sprinkled it on top.)

Another easy way I do salmon is to lay it out the same way as above on the pan, pour a little lemon or lime juice, or some white wine over it; make a sauce out of either sour cream or fat-free yogurt mixed with dill, smear it over the top and bake it in the oven for about the same length of time.

Good he likes fish. Make Salmon parcels with tin foil and add in the foil a splash of worsecter sauce, some garlic and rosemary and thyme. a little knob of butter and a squeeze of lemon juice. Bung in the oven at 200 degrees and bake for 45 mins. Serve with garlic mash. Re the other veg...try (it's difficult) cutting little men out of carrotts, sort of like matchstick men. Also, roast them in a little grapeseed oil (better for you than olive or veg oil) rather than boil. You could also sweeten them up by coating in a little honey before cooking. Good Luck..

I place the salmon in a baking dishandd salt and pepper, and melt half stick of butter in sauce pan, squeeze a lemon in the butter. Pour over the salmon .Bake 375 for about 15 min.

Blackened Salmon


6 Salmon Fillets, 1/2 − 3/4 inch thick, skinned
2 1/2 cups unsalted butter or margarine
1/2 cup fresh lemon juice
1 1/2 teaspoons cayenne pepper
1 teaspoon salt
2 teaspoons fresh ground black pepper
1 Tablespoon dried thyme (do not use fresh − it will burn)
Lemon wedges and Parsley for garnish



Trim off the thin edges of fillets as these would burn. Pat dry
and refrigerate until ready to cook. The butter sauce adheres
better to cold fillets.
In heavy 3−quart cast−iron frying pan over medium heat, melt
butter, add lemon juice, cayenne, salt, black pepper and thyme.
Stir to blend; cool to lukewarm.
Place an empty 10−inch cast−iron skillet over high heat until
bottom has a definite white haze and begins to smoke slightly.
Remove fish from refrigerator; dip 1 fillet in warm butter sauce,
coating well. Place fish in hot skillet, taking care that spits
and spatters do not burn you. Fish will sear and cook almost
immediately. Turn fillet over; blacken other side. Repeat with
remaining fillets.
Reserve remaining butter sauce. As fillets are cooked, place
them on individual plates; keep warm. Discard accumulated butter
sauce in skillet and charred bits between batches. When all
fillets have been cooked, wipe skillet clean and place empty
skillet back on heat. Add reserved butter sauce; carefully swirl
skillet 5 or 6 times to blacken butter. Remove pan from heat;
drizzle butter over each fillet. Garnish and serve hot.

Marinade the salmon in soy, ginger, lime juice and red peppar flakes for a few hours than grill. Or brush EVOO on the filets and sprinkle with diced garlic and place sprigs of fresh dill atop-wrap with foil and grill. Potatoes are always wonderful on the grill-dice and drizzle EVOO on them and shake either Jane's Krazy mixed-up salt seasoning or Cavender's Greek Seasoning, my son loves both and is a fuzzy eater as well!

Bake with some brown sugar, lemon juice, dash of soy and butter over the top. Be sure to cook salmon MEDIUM. Its safe at that temp and much more palatable.

place fish in foil with butter and lots of pepper bake in the oven for 20 Min's to half an hour serve with cucumber salad
