Just back from Greece & whilst there had fab lamb kleftico, but when I have looked at the recipes they do not seem anything like we had. This was in alot of tomatoey sauce, with potatoes, carrots, feta, and slices of mildish green chillies. Anyone have a similar recipe?

LAMB KLEFTIKO


Ingredients:
1 medium leg of lamb - boneless pieces can be used too.
5 tbs. olive oil
juice of 1 lemon
garlic cloves
2 tbsp. chopped parsley
oregano - to taste
cumin - to taste
rosemary - to taste
salt & pepper - to taste




Wash and dry the leg. Make small slits in the thickest parts of the leg and insert the cloves. Salt and pepper the leg and sprinkle generously with the herbs & spices. Mix the oil & lemon juice together and drizzle over the leg. Cover and marinate the leg for 3 hours or overnight.

Pre heat oven to 300F. Spread out a sheet of greaseproof paper and rub it with oil. Take the marinated leg and lay it on the paper. Wrap the leg up tightly in the paper and then wrap once more in aluminum foil. Place in a shallow pan and bake for 2-3 hours, depending on the how well done you like your meat.

A really good way to make kleftiko is with a slow cooker. You just put the meat in in the morning with greek herbs ans some veg and when you get back from work you have this divine melt in the mouth lamb with thick sauce, just like a taverna. You can pop some feta in nearer the end of the cooking too for an authentic kleftico. The only way to cook it properly though is all day on a slow heat, just like the greeks do. Whenever i cook it theres none left on the plates so thats a good sign!

Slow roast the joint in a tin foil envelope for two and a half hours gas mark 5 lots of garlic and rosemary and a whole onion cut in half in from the start with a dash of olive oil, use the juices from the joint to make the gravy
