I agree with the beef roast, however here is how I do it. Get a nice big beef roast, chuck roast is usually good. Put in a roasting pan and open one packet of lipton onion soup mix and sprinkle entire package on top of roast. Then fill the roasting pan with water until the water is almost near to top of the roast, don't put the water directly on the roast or all of the seasoning will wash off. Then cover the roasting pan and stick it in the oven at about 300 degrees for at least 4 hours, the longer the better.
Make mashed potatoes, a veggie (whatever he likes) and a salad and maybe garlic bread.
When the roast is finished take almost all of the juice (which is left in the pan etc.) and pour into a saucepan - sprinkle with salt and make your gravy from that. To make the gravy - in a cup mix hot water and flour until you get a paste - pour the paste into the saucepan and whisk - when you get it thick enough strain into another pan so as to get the chunks out and then simmer until your roast is done - add salt or pepper if you like.
This is and has always been one of my hubby's favorite meals. It takes time and a lot of dishes after, but it's worth it.
As for presentation - a nice bottle of wine (red) and some flowers and candles always seem to work nice and of course make yourself look as delicious as your meal!

This is my FAVORITE recipe for pot roast. It's tender, juicy and full of flavor... and VERY simple.
Enjoy!
Cola Pot Roast
4 pounds beef sirloin roast
3 carrots, chopped
3 stalks celery, chopped
1 clove garlic, minced
1/2 (.75 ounce) package dry brown gravy mix
2 tablespoons water
1 (1 ounce) package dry onion soup mix
1 (10.75 ounce) can condensed cream of mushroom soup
10 fluid ounces cola-flavored carbonated beverage
Preheat oven to 350 degrees F (175 degrees C).
Place meat in a roasting pan. Sprinkle carrots, celery and minced garlic around roast.
In a small bowl, combine the brown gravy mix and water, mixing into a smooth paste. Add onion soup mix, cream of mushroom soup and cola-flavored carbonated beverage. Pour over the roast.
Cover pan, and cook 1 hour in the preheated oven.
Reduce oven temperature to 225 degrees F (110 degrees C), and continue cooking 2 hours. Remove from oven, and turn roast over so that the top is now covered with the gravy. Cover pan, and return to oven for a minimum of 2 hours.
Remove from oven, and let meat rest for 10 minutes before slicing.
This is excellent with homemade mashed potatoes, green beans a nice salad. Very simple... and he'll love ya!

A prime rib is hard to cook if you don't have the right cut of beef. Stick with a roast in the crockpot. And if you're not keen on beef, then while the roast is cooking, make sure you're making something you can eat. (My husband's the same way) :)

Top each steak with 2 Tbsp. of butter mixture.
Combine bell peppers with 2 Tbsp. butter mixture in medium bowl; toss.

How about a couple of nice juicy steaks on the grill , with some corn on the Cobb, salad and some yeast rolls? Another choice that seems quite popular from other answers is the roast...yummy

How about a nice t-bone steak served with sauteed mushrooms in a wine reduction sauce, Yukon gold mashed taters, and fresh steamed greenbeans with a hollandiace sauce. For desert, pecan pie ala-mode with 1 lit candle in the ice scoop.
Congratulations of your first....Hope you have many more to come.

You can't beat a beautiful Filet Mignon. That's the filet (tender part) of a steak, wrapped in bacon. You grill it, and serve with Bearnaise sauce - you can buy a package mix - easy!!! Serve with asparagus, or shrimp and scallops if you want or grilled veggies. Boil some potatoes with garlic and mash 'em up with sour cream or cream cheese! Delicious
Good Luck!
