I am not a believer, but I asked a question about this a couple of months ago that may describe your differentiation.
Immortality implies that someone exists as their whole person. I imagine that immortality would require we keep our memories, our sense of self, and our senses.
Eternal life, however, seems to involve a bait-and-switch. I asked about how people could feel happy in heaven when they believed that some of the people they had loved on earth were enduring eternal torment. Most of the answers I received suggested that their version of "eternal life" meant that God wiped their memories clean and that they would have no memories of others. There were bible verses cited, but I can't recall them now. However, apparently there are a number of Christians who believe in this version of eternal life.

No one is in heaven except The Father,Christ and the angels. And no one is burning in hell experiencing "eternal torment". Christ said that no one has gone to heaven except He who came down from heaven (John 3:13). Hebrews 11 says that all of those mentioned there died without receiving the promise. If the promise is heaven, then where are they? They are in the grave awaiting the resurrection at the last trump. Those who died without being saved are in the graves awaiting the 2nd resurrection. Those who ultimately reject salvation will be burned up in "hell-fire" (Ghenna fire) forever -- not burn forever. The wages of sin is death (Romans 6:23), not eternal life. (That is talking about the 2nd death, because it is given to all to die once.) The immortal soul doctrine is not Biblical. It a pagan concept and stems from the lie that Satan told Eve in the Garden of Eden: "You shall not surely die." Christ will rule on earth with the resurrected saints for 1,000 years. After which (when everyone who has accepted salvation has been born into the Kingdom of God, the Father will bring His Throne -- New Jerusalem -- to earth and create a new heaven and a new earth (Revelation 21).
