Here's a really mouth-watering list of potential potato toppings, just to get you in the mood:

Salsa (preferably chilled)
Chilli, grated cheese, and a bit of chopped onion
Plain yogurt, coriander1, and diced cucumber and/or red onion
Sautéed mushrooms (this one seems quite popular)
Pizza sauce and grated mozzarella
Caviar
Cheese and beans
Curry
Chilli con carne
Brie, Stilton or grated mature Cheddar
Cheddar and beans
Cheese and tomato
Cold cottage cheese with onion and chives, or lightly dressed coleslaw
Corned beef and horseradish
Scrambled egg, tomato, and green pepper
Butter with black onion seeds and a little salt
Cheese-grated and mixed with mayonnaise and spring onion,with a little sprinkle of crushed black pepper
Prawn mayonnaise
Slices of smoked sausage (smoked sausage can be heated in a microwave)

Bake the potato as usual. Meanwhile, fry one chopped up onion, 3 slices of bacon and a diced pepper for 7 minutes until it all goes brown and then add a splash of Lea & Perrins and half a tsp of English mustard into the mix. Fry this for about a minute further. Leave this to cool while you cut the potato in half when it's done, gently scoop out the middle of the 2 halves (try not to break the skin!) and transfer the mashy potato into a separate bowl. Mash the bacon mixture into the potato. You can add a bit of salt and pepper to taste at this stage. Scoop the mixture back into the halves, top with grated cheese (lots of!) and stick it back into the oven for a few minutes or until the cheese is a lovely bubble golden brown. I love this recipe and always make it at home. Goes down a treat when making it with small new potatoes for a party!

I see someone's said "Bung it in the microwave...." WELL, if you DO just do that, standby for a big bang - it'll explode!!!
If you're going to m/wave it (which isn't 'baking' but the result's much the same except for the skin), scrub it clean, pat it dry with a paper towel, prick it several times with a fork, then put it uncovered in the m/w oven ON that bit of paper towel and m/w it on full for 6-8 minutes (or more, depending on size) turning it over every couple of minutes until getting a bit soft - go careful or you'll burn your fingers! - then when it's soft enough, leave it to stand for a couple of minutes. It won't go cold so don't worry - and you won't be able to get near it to eat it yet anyway! When you're ready, slit it open, add a knob of butter (or more....) and a little salt, then add the filling of your choice - anything you fancy from grated cheese to caviar. OF COURSE, if you don't want to use any other filling, just add so much butter that it could swim away if it were a fish, then add salt and pepper to taste.... and only three million calories a mouthful!!!! Lovely!!!!

Take a nice size baking potato, scorch the potato with a knife, like little holes, take some salt in your hand and rub around the potato, take foil and cover the potato completely, and put in dish in a nice hot oven, gas mark 9, bake till about 45mins, until tender. Once potato cooked, take out of foil, split in the middle half way down, add butter, and nice hot baked beans on top with black pepper and topped with cheese. Other toppings you can have is sweetcorn and cottage cheese, tuna and mayonaise, or just on its own with some roast chicken or roast lamb, works a treat.

Put it in the oven for until it goes soft - gas mark 5 for about 1 1/2 hours. Baked Beans or Tuna are healthy fillings.

Either rub with olive oil, wrap in foil and put it in the over for an hour, or prick it and put it in the microwave for about 10 minutes. If you like crispy baked potatoes but don't have the time, microwave it and then put it in the over afterwards for 10 minutes to crisp the skin up.

My fave filling is beans and cheese, but also coleslaw and cheese or cheese and pickle, or chilli and cheese. Basically cheese is a must for any jacket potato!!

Clean a medium sized potato, pierce the skin with a fork a number of times, and put it in the oven at 200 degrees C for 45 minutes or until soft. Test for readiness by pushing a fork into it - if a fork goes in easily, it's ready.

Tuna mayo filling with low-fat mayo is pretty healthy I guess.

make sure you use a baking potato, like a Russet Potato
poke holes in it with fork or knife

two options of cooking it:
7 minutes microwave (high)
OR 1 hr in oven at 350

by combining the two you can get a nice baked potato with crispy skin (7 minutes microwave + 10 min. oven)

fillings: butter, sour cream, ham, scallions, cheese, beans

Bake on a slow heat for 1.5 - 2 hours depending on size. Cheese and coleslaw is nice, also chilli is very nice filling which you could make whilst the potato is cooking!

take potatos slightly bigger than medium size
make + cut and fill cut with mixture of melted cheese,& tartar sauce or philly & mayonaise.
Add 1/2 slice cheese one to each potato over
the + cut ( note it's best to cut the slices triangularly they'll be move even that way)
cook till cheese is melted or when you can poke potato easy with a straw! Note flat cookie
sheet with rimmed edge is ideal for to lay the potatos on with cross cut up!
