Some airlines like BA now have chip and pin payment systems on aircraft, but have no internet or other commercial communications to ground, so how does it verify the pin? is the pin stored on the card, or just part of it? on a ferry recently they had a chip/pin terminal and I asked how it worked and they said it had a mobile phone built in, but surely that's not true for the plane.

Yes on both counts. Your card chip has your pin number encrypted in it, which the card reader can then verify against the pin entered, to allow the transaction.
The sale data is then stored within the payment system until it can be connected or wirelessly transmitted to the network.
