Breakfast Casserole Prep Time: 15 min Cook Time: 45 min
12 ounces mild bulk sausage
12 ounces hot bulk sausage
10 eggs, lightly beaten
1 cup sour cream
1 large onion, chopped
1 green pepper, chopped
1 red pepper, chopped
1 zucchini, chopped
16 ounces mushrooms, sliced
2 cups cubed American cheese

Preheat the oven to 350 degrees F.
Cook sausage. Drain grease and set aside to cool slightly.
In a large, deep baking dish, add sausage, eggs, sour cream, onion, peppers, zucchini, mushrooms, and cheese and stir to mix. Bake for 30 minutes or until golden color.

Chili Omelet Recipe Prep Time: 10 min Cook Time: 10 min
1/2 pound breakfast sausage links
1 (15-ounce) can vegetarian chili with beans
1 (8-ounce) package 3-cheese Mexican shredded cheese
2 tablespoons unsalted butter
2 large eggs
1/4 cup chopped chives
Sour cream, for garnish

Cut the sausage into 1/4-inch chunks. In a medium skillet over medium-low heat, brown the sausages. When brown, add the chili and heat through, about 5 minutes. For an extra-cheesy omelet, stir in a handful or 2 of the cheese. While this is cooking, heat an 8-inch skillet over medium-low heat and melt the butter. Beat the eggs with half the chives and pour into the pan. Cook until the egg forms a solid yellow circle. Cover half of the omelet with the sausage and chili mixture, reserving 1/4 cup. Add a layer of cheese, reserving 1/4 cup. Fold the omelet and top with the remaining chili and cheese. Slide the omelet onto a plate and garnish with a large dollop of sour cream and the remaining chives.

4 eggs, lightly beaten
2 tablespoons butter
2 (8-inch) pizza crusts
1 tablespoon extra-virgin olive oil
2 cups shredded jack cheese blend
4 fully cooked sausage patties, crumbled
1/4 cup shredded Parmesan
1 medium tomato, diced
1 teaspoon Italian seasoning

In a medium pan over medium heat, scramble eggs in butter; set aside. Lay out pizza crusts and brush each with oil. Top with eggs, cheese, crumbled sausage, Parmesan, tomatoes, and Italian seasoning. Preheat oven to 450 degrees F. Prepare pizza as directed. Bake in preheated oven for 8 to 10 minutes or until cheese is melted and begins to bubble. Serve hot, cut into wedges.

Breakfast burritos - Scramble eggs, with shredded cheese, crumbled bacon, ( or sausage ) onion, bell peppers, if you like, mushrooms - really anything can go in it. Put it on a tortilla and roll up and eat - you can put hot sauce or salsa' on it if you want also. You have to make this in the morning, but it is good - cut a hole in a piece of bread, butter the cut out piece and the other piece, put it in a frying pan and break an egg inside the hole. Cook until done, only flipping once the egg has cook and won't run when you flip it. Brown the round piece on both sides - and use it to dip the runny part of the egg(yolk) when you are eating it.

Strata all the way..anything can go it in!!! Make it w/garlic bread...try this basic recipe and add whatever you like...meats, veggies, various cheeses, spices and different breads. Bake @ 350 for about 40-60 minutes...depending on how big of a pan you use. It puffs up so pretty:)
here is a basic recipe, just keep your eggs and milk the same....HOT SAUCE is GREAT in it too:)

2 teaspoons dry mustard
2 teaspoons salt

1 small can green chiles, chopped, 4 ounces
4 cups milk

Omelets are great for variety. Consider the ingredients you enjoy.

Making sausage or bacon (turkey or pork) before the eggs are a great way to pre-flavor the pan and eggs.

After the breakfast meats, add diced onions - allow the onions to cook and get a caramel color before adding the eggs.

Add the eggs - either keep as a omelet or scramble - add mushrooms, green peppers, tomatoes, capers, and black pepper

Consider garnishing with your favorite salsa or make your own pico de gaillo. Add jalapenos for spice.

Too tame? Something you've already tried?

Try buckwheat pancakes, adding honey to the recipe. Top with maple syrup, orange marmalade and sea salt.

I think it would also help if we knew what you normally ate or have already tried for breakfast... or perhaps how much time you have to prepare your breakfast.

My sister calls this a train wreck. It's home fries, eggs, onions, maybe some peppers like jalapenos
mix it all together. Melt cheese on the top and there you have it,

I like breakfast tacos too. Scramble eggs with peppers, tomatoes (put them in last) with some cheese. Wrap it up in a corn tortilla or a flour one and enjoy.

I call these eggs in a basket. In a muffin pan butter slices of bread and cut crust off. Lay buttered bread side down in the muffin pan. Then crack med. or small eggs inside. Top with cheese Bake in oven 250 degrees for about 15 to 20 mins. So they aren't slimy. I shake the pan to see if they wiggle. remove and enjoy.

This is really easy. Grease a pie plate. Take 2-3 slices of sandwich bread and just randomly tear them up into bits to line the bottom. Sprinkle some shredded cheddar over the bread. Crack 6-8 eggs evenly over that. Cover with another layer of cheese and tear up some more bread. Pour a cup of half and half or cream over it. Put it in a 375 oven. Check it after 20 minutes (but it will take longer) up to 45 minutes depending on your oven. When you dig in, sprinkle with cayenne.

Corned Beef Hash and Eggs

2 tablespoons oil
3 cups finely-chopped onion
8 to 10 ounces corned beef, cut into 1-inch cubes (about 1 cup)
2 cups boiled, peeled and cubed potatoes (cut into 1-inch pieces)
1 tablespoon wholegrain mustard
Salt and pepper
2 eggs
Chopped parsley, for garnish

In a nonstick skillet heat oil, add onion and corned beef and cook for 4 minutes to heat through. Add potatoes and mustard, stirring to incorporate, and cook 5 minutes; season to taste with salt and pepper. Using a spatula, flatten hash in skillet and make 2 holes for eggs. Crack eggs into holes, reduce heat and cook until eggs are done to your taste. Serve garnished with parsley.

BREAKFAST EGGS

6 eggs
3 tablespoons cream
1 tablespoon butter
Salt and pepper to taste

Put butter in a hot baking-dish. After breaking the eggs one at a time in a saucer, slip carefully into the hot baking-dish. Add the cream and sprinkle salt and pepper over them. Cook 5 minutes and serve hot in the baking-dish.

I make breakfast burritos a lot. Toritas, then scramble eggs put any veggies onion, peppers, tomatoes,ham, sausage, etc. in them. Then add cheese. Roll up in a torita and serve with salas. My husband loves this.

Scrambled eggs with garlic and cheddar cheese.Crack two to three eggs in a bowl add a couple of sprinkle of garlic salt and shredded cheddar cheese .
