Most anything you like. Our favorite from years of meatless Fridays is mac and cheese, tuna and peas. You can also add whatever meat you have left over: ham, chicken, sausage, bacon. The kids love the chopped up hot dogs ( gag). My husband loves those little Vienna sausages and Spam( double gag). My daughter adds things like water chestnuts and various vegetables. Take a look at the inside of your refrigerator or cupboards and get creative. Of course, the old standard is hotdogs cut up into small round slices; but to really spice things up, I sometimes add a bit of garlic, onion flavoring, and a touch of chili or something "hot" like that. I would use only a small amount so that it remains subtle, but if you like it, you can add a touch more the next time you make it.
Unfortunately, you can't tell if it's too much until after it's all cooked, so you may need to experiment a few times before you get it just right. Just make sure you keep notes on exactly how much of each spice you use.

Cubed ham and peas is always good. However, Kraft Foods has a website that offers the best quick recipes. A lot of them use mac and cheese. And they are delicious.

If you mean boxed mac and cheese from the store--that's not boring--it's disgusting!!
Try this--I can guarantee you'll love it. Once you've tried it, you won't want to go back to the instant stuff, or add anything to it!
8 tbsp. butter
6 tbsp. flour
1/2 tsp. cayenne pepper
Salt and freshly ground white pepper
3 3/4 cups hot milk
4 cups grated cheddar
1 lb. short macaroni, cooked
1/2 cup heavy cream
1/2 cup fresh bread crumbs
1. Preheat oven to 350°. Melt 6 tbsp. butter in a medium stainless-steel saucepan over low heat. Add flour and cook, stirring constantly, for about 4 minutes (flour mixture must foam as it cooks, or sauce will have a raw-flour taste). Stir in cayenne and season to taste with salt and pepper. Whisk in hot milk, 1/2 cup at a time, and cook, stirring, until sauce thickens. Reduce heat to low and stir in 2 cups of cheese. Cook, stirring, until cheese melts, about 2 minutes.
2. Combine pasta and sauce in a large bowl, and season with salt. Sprinkle 1/2 cup cheese over the bottom of a buttered 8'' x 11'' baking dish. Place one-third of the pasta in the baking dish, top with 1/2 cup of cheese, then repeat, layering pasta and cheese, ending with cheese, making three layers in all.
3. Pour cream over assembled macaroni and cheese. Melt remaining butter in a skillet. Add bread crumbs, coat with melted butter, and sprinkle over macaroni and cheese. Bake until crust is golden, about 30 minutes. Allow to rest for 15 minutes before serving.

3. ham chunks
4. fresh jalepeno peppers
5. italian breadcrumbs
6. worchestershire sauce
7. hot and spicy spam chunks
8. tuna and slivered almonds
9. top with cornflakes
10. bag of frozen mixed vegetables

I saute some onion. and add a can of stewed tomatoes. Put additional cheese on top and brown under the broiler.
