AMD Opteron:

or AMD Athlon 64 X2 Dual-Core

And an AM2 socket motherboard.

Well, Intel makes Pentium, for one.

I've heard a lot of good things about the 2 Duo Core. It's supposedly the top of the line, upstaging the original Duo Core. I think the Extreme is a little bit older that 2 Duo, also.

Intel (I believe starting with Duo2) is starting to focus on performance (like AMD) rather than sheer GHz to promote their processors. So that could be why the 2 Duo has less GHz. Make sure you go with the 2 Duo Core Extreme, if you do.

Of course, while a know a ton about computers, processors is my one weak area. However, logic would suggest that the most recent release is the best, thus the 2 Duo Core would win out.

Well I would say go with the AMD 64 FX-62 (AM2 socket) with 2 gigs of DDR, with the Asus M2N32 WS Pro motherboard and atleast 1 XFX GeForce 7950 GX2. I would go with 2 if you can afford it. This will be one powerfull and super quick machine. Your looking about 2 grand for everything but its extremly powerful. I have this setup with 4 gigs of ram and 2 GPU in SLI and i have found nothing that can bring it to it knees.
