The unstoppable/irresistable forces stops, the unmoveable object moves. They transfer their properties, because as they are infinite neither can be "defeated" but their properties can be diverted.

Assuming they only move in straight lines and forwards then I would argue you would have cohesion.

A theoretically flat surface requires no gaps to create perfect adhesion when in contact with another perfect flat surface in your example any space at all would be removed as the irresistable part would drive out any gaps.
