I think its mainly for the presentation of the suit, by keeping the pockets stitched it'll stop the pockets from flopping and keep it looking new.

Oooh - it drives me NUTS when I get a jacket or suit and the pockets are stitched. What's even worse is when you unpick the pocket, and it turns out to be a fake pocket.
Especially with ladies' suits (which are usually fitted), the line of the jacket (in particular) is much cleaner when the pockets are empty. However, it does rather defeat the purpose of having pockets.
Many cheaper suits will just have fake pockets (again, we're really talking women's suits), since the line is more easily ruined in a cheaper suit, and because pockets are expensive (the lining, the cut and so forth.)

To keep the suit looking good. Don't use the outside pockets - I assume these are the ones stiched up. Only put small objects in the inside pockets, not bulky or heavy. Look after your suit and it will look good much longer than if you don't - years if you are lucky - just hope that styles don't change to much.

so it all stays nice and tidy - you also have the choice of leaving them closed if you don't use them if the stitching doesn't show. Do remember to take labels off the outside though - it does not look good even you do want everyone to know who made your suit!

because the idiots that design the $99 suits think Bill Gates will buy them all. He doesn't need to put anything in his pocket, his chauffeur and bodyguards carry all his stuff.

because most people tend to put their hands in the pockets when they try the new clothes on. this makes the pockets look bigger or get widened by their hands
