I believe from HS Science Class that it's a matter of surface area, as a cell expands the ratio of its size to surface area increases. Splitting maintains the same size but gives twice the surface area, allowing for more surface area to handle a cell's needs with its own environment.

Someone with experience in biology could probably give a better answer.

I certainly hope the guy above me isn't serious, but Jellyfish are certainly not one celled organisms.
